Sweet Potato Cupcakes
- Prepare the Oven and Cupcake Pan: Preheat the oven to 350°F (175°C). Line a 12-cup cupcake pan with paper liners.
- Combine the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger until evenly distributed.
- Mix the Wet Ingredients: In a separate bowl, whisk the vegetable or canola oil, room-temperature eggs, packed light brown sugar, vanilla extract, and sweet potato puree until the mixture is well combined.
- Make the Cupcake Batter: Pour the wet mixture into the bowl of dry ingredients. Stir until the ingredients are incorporated and no streaks of dry flour remain. Avoid mixing beyond this point.
- Fill the Cupcake Liners: Divide the batter evenly among the prepared liners, filling each approximately two-thirds full.
- Bake the Cupcakes: Bake at 350°F (175°C) for approximately 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Cool the Cupcakes: Let the cupcakes cool in the pan for about 10 minutes. Transfer them to a cooling rack and allow them to cool completely before adding the frosting.
Meringue Frosting
- Heat the Frosting Ingredients: Combine the sugar, cream of tartar, vanilla extract, and room-temperature egg whites in a heatproof mixing bowl. Set the bowl over a saucepan of simmering water to create a double boiler, ensuring the bowl is positioned over the water rather than immersed in it. Stir constantly until the mixture reaches 160°F (71°C), then remove it from the heat.
- Whip the Meringue: Using a stand mixer or electric hand mixer, begin whisking the warm mixture at low speed, gradually increasing to high. Continue whipping for approximately 5–10 minutes, until the meringue forms stiff, glossy peaks.
- Pipe the Frosting: Once the cupcakes have cooled completely, transfer the meringue to a piping bag. Pipe the frosting onto each cupcake as desired.
- Toast the Meringue: Carefully use a culinary torch to toast the piped frosting until the tops develop a lightly golden finish. Serve the cupcakes once the frosting is toasted.
Notes
-
Measure accurately: Weigh the dry ingredients in grams using a kitchen scale for more consistent baking results.
-
Use room-temperature eggs: Room-temperature eggs blend more easily into the cupcake batter and meringue mixture.
-
Prepare smooth sweet potato puree: Use smooth puree so it incorporates evenly into the batter without leaving large lumps.
-
Avoid overmixing: Stir the wet and dry ingredients only until no visible streaks of flour remain to help keep the cupcakes tender.
-
Check for doneness: Insert a toothpick into the center of a cupcake. It should come out clean when the cupcakes are fully baked.
-
Cool completely before frosting: Warm cupcakes can soften the meringue and cause it to lose its shape.
-
Monitor the meringue temperature: Stir the frosting mixture constantly over simmering water until it reaches 160°F (71°C).
-
Whip to stiff peaks: The meringue should look glossy and hold its shape when the whisk is lifted before piping.
-
Toast carefully: Use a culinary torch to brown the frosting lightly and evenly without scorching it.
