  • Ingredients required on the cake-mix package prepared according to package instructions
Kulfi Tres Leches Milk Mixture
  • 1 12-ounce can evaporated milk, using 1 cup
  • 1 14-ounce can sweetened condensed milk, using 1 cup
  • ½ cup whole milk
  • 1 teaspoon rose water
  • ½ teaspoon saffron threads
  • ½ teaspoon ground cardamom
Whipped Cream Frosting
  • 1 pint heavy whipping cream
  • 3 tablespoons confectioners sugar
Garnish
  • Chopped pistachios
  • Dried rose petals

Equipment

  • 12-cup muffin tin
  • Cupcake liners
  • Mixing bowl
  • Mixing spoon or whisk
  • Microwave-safe bowl
  • Measuring cups and spoons
  • Toothpick
  • Stand mixer or hand mixer
  • Piping bag or butter knife
  • Baking tray or plate for refrigeration

Method

  1. Prepare the Muffin Tin: Preheat the oven to 350°F and line a 12-cup muffin tin with cupcake liners.
  2. Make the Batter: Prepare the vanilla cake mix according to the package instructions, combining the required ingredients until the batter is smooth and free of lumps.
  3. Fill the Liners: Divide the batter among the prepared cupcake liners, filling each approximately three-quarters full.
  4. Bake the Cupcakes: Bake for 10–14 minutes, or until the centers are fully baked.
  5. Warm the Milk: Place the whole milk in a microwave-safe bowl and heat for 30 seconds.
  6. Infuse the Milk: Add the saffron threads, ground cardamom, and rose water to the warmed milk, then stir to combine.
  7. Complete the Milk Mixture: Add 1 cup evaporated milk and 1 cup sweetened condensed milk to the flavored whole milk, mixing until combined.
  8. Chill the Milk Mixture: Place the prepared kulfi tres leches mixture in the refrigerator until you are ready to use it.
  9. Whip the Frosting: Combine the heavy whipping cream and confectioners sugar in a stand mixer or with a handheld mixer, beating on high speed for 5–7 minutes until stiff peaks form.
  10. Chill the Frosting: Transfer the whipped frosting to the refrigerator until needed.
  11. Poke the Cupcakes: Once the cupcakes have finished baking, use a toothpick to make approximately 15–20 holes across the surface of each cupcake.
  12. Soak the Cupcakes: Slowly spoon 1–2 tablespoons of the chilled milk mixture evenly over each cupcake, allowing the liquid to soak into the holes.
  13. Rest Before Chilling: Let the milk-soaked cupcakes stand at room temperature for about 10 minutes.
  14. Refrigerate the Cupcakes: Place the cupcakes on a baking tray or plate and refrigerate for at least 1 hour.
  15. Frost the Cupcakes: Transfer the whipped cream frosting to a piping bag and pipe it over the chilled cupcakes, or spread it evenly over the tops using a butter knife.
  16. Add the Garnish: Finish each cupcake with chopped pistachios and dried rose petals, then serve.

Notes

  • Wax-paper cupcake liners work particularly well because they can hold the milk mixture without leaking. Foil liners or silicone liners can also be used.
  • Place the soaked cupcakes on a baking tray or plate before refrigerating in case any of the milk mixture leaks.
  • A Blendtec, Beast, Nutribullet, stand mixer, or handheld mixer can be used to prepare the whipped frosting.
  • For an eggless version, replace each egg called for by the cake-mix instructions with 3 tablespoons of yogurt. Whole-milk yogurt or Greek yogurt can be used.
  • Dried rose petals can be found in the seasoning aisle at Whole Foods; the source specifically mentions the 365 brand.
  • Allow the cupcakes to rest for about 10 minutes at room temperature after soaking before transferring them to the refrigerator.
