Ingredients

For the Nectarine Filling
  • - 7–8 fresh nectarines about 6–8 cups, peeled and sliced
  • - ⅓ cup sugar
  • - 1 tablespoon butter optional
  • - 1 tablespoon cornstarch
  • - 1 teaspoon vanilla extract
For the Cobbler Topping
  • - 1½ cups all-purpose flour
  • - 1 cup sugar
  • - 2 teaspoons baking powder
  • - ½ teaspoon salt
  • - 12 tablespoons 1½ sticks cold butter, cut into cubes
  • - ¾ cup heavy cream or buttermilk
  • - Sparkling sugar or granulated sugar for sprinkling

Equipment

  • Large skillet
  • Large mixing bowl
  • Pastry blender or fork
  • Measuring cups and spoons
  • Sharp knife
  • Cutting board
  • Spatula or wooden spoon
  • 2 to 2½-quart baking dish
  • Oven

Method

  1. Preheat the Oven: Preheat the oven to 375°F.
  2. Prepare the Nectarines: Peel the nectarines and slice them until you have approximately 6–8 cups of fruit.
  3. Cook the Fruit Filling: Place a large skillet over medium heat and melt 1 tablespoon of butter, if using. Add the sliced nectarines, ⅓ cup sugar, and cornstarch.
Stir and cook for 7–8 minutes, or until the fruit releases its juices and the mixture begins to thicken.
  4. Add the Vanilla: Stir the vanilla extract into the cooked nectarine mixture until evenly incorporated.
  5. Transfer the Filling: Pour the warm nectarine filling into a 2- to 2½-quart baking dish, spreading it evenly across the bottom.
  6. Combine the Dry Ingredients: In a large mixing bowl, combine the flour, 1 cup sugar, baking powder, and salt. Stir until the ingredients are evenly distributed.
  7. Cut in the Cold Butter: Add the cubed cold butter to the flour mixture. Use a pastry blender, fork, or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  8. Make the Topping Dough: Pour in the heavy cream or buttermilk. Mix until the ingredients come together to form a cohesive dough.
  9. Add the Topping: Drop tablespoon-sized portions of the topping dough over the nectarine filling. Leave some spaces between the portions, as the topping will puff up during baking.
  10. Sprinkle with Sugar: Generously sprinkle sparkling sugar or granulated sugar over the topping for a sweet finish.
  11. Bake the Cobbler: Place the baking dish in the preheated 375°F oven and bake for approximately 38–45 minutes, until the topping is light golden brown and the fruit filling is bubbling. If using a smaller baking dish, additional baking time may be necessary.
  12. Serve Warm: Allow the cobbler to cool slightly, then serve warm with vanilla ice cream or homemade whipped cream.

Notes

  • Choose ripe nectarines: Use fresh, ripe nectarines for a naturally sweet, juicy filling. Peel and slice them before cooking.
  • Adjust the butter if needed: The tablespoon of butter in the fruit filling is optional, but it adds extra richness.
  • Thicken the filling: Cook the nectarines with sugar and cornstarch for 7–8 minutes, allowing the juices to begin thickening before transferring the mixture to the baking dish.
  • Keep the topping butter cold: Cold, cubed butter helps create the crumbly texture needed for the cobbler topping.
  • Choose your dairy: Either heavy cream or buttermilk works in the topping, so use whichever option you have available.
  • Leave gaps between topping portions: The dough expands as it bakes, and the spaces allow the fruit filling to bubble through.
  • Check for doneness: Look for a light golden topping and bubbling fruit filling. Baking generally takes 38–45 minutes at 375°F.
  • Try peaches as a substitute: Peeled, sliced peaches can replace nectarines in this recipe.
  • Handle frozen fruit carefully: Thaw frozen nectarines completely and drain excess liquid, or cook them in a skillet until much of the excess liquid evaporates.
  • Serve warm: The cobbler is especially enjoyable fresh from the oven after a brief cooling period, paired with ice cream or whipped cream.
