Ingredients

  • 3/4 cup unsalted butter melted
  • 3/4 cup Dutch-process cocoa powder
  • 1 teaspoon vanilla extract
  • 1 3/4 cups packed light brown sugar
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup fresh raspberries frozen for 1 hour before using
  • 1/2 cup semisweet or bittersweet chocolate chips or chopped chocolate (optional)

Equipment

  • 8 x 8-inch baking pan
  • Parchment paper
  • Mixing bowl
  • Stand mixer with whisk attachment
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Knife for testing doneness

Method

  1. Prepare the Baking Pan: Preheat the oven to 350°F. Grease an 8 × 8-inch baking pan, then line it with parchment paper on all sides. Set the prepared pan aside.
  2. Combine the Cocoa Mixture: Place the melted butter, Dutch-process cocoa powder, and vanilla extract in a mixing bowl. Whisk until thoroughly combined and no lumps of cocoa remain. Set aside.
  3. Whip the Eggs: Add the eggs and packed light brown sugar to a stand mixer fitted with the whisk attachment. Beat until the mixture becomes light, fluffy, and pale in color.
  4. Combine the Mixtures: Add the butter-and-cocoa mixture to the whipped egg mixture. Use a rubber spatula to gently fold everything together until evenly incorporated.
  5. Add the Dry Ingredients: Add the all-purpose flour and salt to the mixture. Fold gently until no streaks of flour remain, taking care not to overmix.
  6. Fold in the Raspberries: Gently fold the chilled raspberries into the brownie batter.
If using chocolate chips or chopped chocolate, fold them in at the same time, distributing them throughout the batter without breaking up the berries unnecessarily.
  7. Fill the Pan: Transfer the finished batter to the prepared 8 × 8-inch pan and spread it evenly.
  8. Bake the Brownies: Bake at 350°F for roughly 25 minutes, beginning to check for doneness at 20 minutes.
The brownies are ready when the edges are set while a knife inserted into the center still comes out with some brownie batter on it. Depending on the oven, they may require up to 35 minutes to cook through.

Notes

  • For the best texture, use fresh raspberries and freeze them for 1 hour before folding them into the batter. This helps keep the berries firm and reduces the chance of them breaking apart.
  • Store-bought frozen raspberries can release more juice into the batter, which may result in brownies that are more cakey.
  • The chocolate chips or chopped chocolate are optional, so they can be omitted if you prefer the raspberry flavor to stand out more.
  • Begin checking the brownies at 20 minutes, since oven performance can vary.
  • Look for set edges and a center that still leaves some brownie batter on the knife for the desired fudgy texture.
