Ingredients

Lemon Brownies
  • 8 oz 226 g white chocolate bars, chopped (Lindt, Ghirardelli, or similar)
  • 3/4 cup 168 g unsalted butter, chopped into small cubes
  • 2 eggs
  • 2 egg yolks
  • 1 1/4 cups 250 g granulated white sugar
  • 3 tbsp 15 g lemon zest, from 3–4 lemons
  • 1/2 tbsp vanilla extract
  • 1 3/4 cups 219 g all-purpose flour, spooned and leveled
  • 3/4 tsp salt
Lemon Glaze
  • 1 1/2 cups 195 g powdered sugar
  • 2 –3 tbsp 30–45 ml fresh lemon juice
  • Pinch of salt
  • 1 tsp lemon zest plus extra for topping

Equipment

  • 9×9-inch metal baking pan
  • Parchment paper
  • Double boiler
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Rubber spatula
  • Mini offset spatula
  • Butter knife
  • Wire cooling rack
  • Measuring cups and spoons

Method

  1. Prepare the Pan: Preheat the oven to 325°F (165°C). Lightly grease a 9×9-inch metal baking pan, then line it with parchment paper and set aside.
  2. Melt the Chocolate: Place the chopped white chocolate and cubed unsalted butter in a double boiler over medium-low heat. Stir continuously so the white chocolate heats evenly. Once the mixture is melted and smooth, remove it from the heat.
  3. Whisk the Wet Ingredients: Add the eggs, egg yolks, granulated sugar, lemon zest, and vanilla extract to a large bowl. Whisk until the mixture becomes pale and smooth. An electric hand mixer can also be used on high speed.
  4. Combine the Chocolate Mixture: Pour the melted white chocolate and butter into the egg mixture. Whisk until everything is thoroughly combined and smooth.
  5. Add the Dry Ingredients: Add the flour and salt to the wet mixture. Using a rubber spatula, gently fold until just combined, taking care not to overmix.
  6. Fill the Pan: Transfer the lemon brownie batter to the prepared pan. Use a mini offset spatula to spread and smooth the batter into an even layer.
  7. Bake the Brownies: Bake at 325°F (165°C) for 32–36 minutes. If the brownies begin becoming too brown toward the end of baking, loosely cover the pan with parchment paper.
  8. Cool Completely: Place the baked brownies in the pan on a wire rack and allow them to cool completely before removing or glazing.
  9. Release the Brownies: Once completely cool, run a butter knife around the edges to loosen the brownies from the pan. Gently lift the parchment paper to release the brownies.
  10. Prepare the Lemon Glaze: In a medium bowl, mix the powdered sugar, fresh lemon juice, pinch of salt, and 1 teaspoon lemon zest until combined into a glaze.
  11. Glaze the Brownies: Pour the lemon glaze over the cooled brownies. Use a mini offset spatula to spread it into an even layer.
  12. Finish the Topping: Allow the glaze to set, then sprinkle additional lemon zest over the surface.
  13. Cut and Serve: Cut the glazed brownies into 16 squares and serve.

Notes

  • Use white chocolate bars from a good-quality brand, such as Lindt or Ghirardelli, for a smooth, rich brownie base.
  • Chop the white chocolate and butter into smaller pieces so they melt more evenly in the double boiler.
  • Stir the chocolate and butter continuously while melting to help the white chocolate heat evenly.
  • Spoon and level the flour when measuring to maintain the specified quantity.
  • Fold the flour and salt into the wet mixture only until combined for the intended fudgy texture.
  • Watch the brownies closely near the end of baking. If the surface is becoming too brown, loosely cover the pan with parchment paper.
  • Let the brownies cool completely before releasing them from the pan or adding the glaze.
  • Allow the glaze to set before adding the extra lemon zest and cutting the brownies into squares.
