Ingredients

  • 113 g unsalted butter melted (1 stick)
  • 150 g granulated sugar ¾ cup
  • 150 g brown sugar ¾ cup
  • 2 large eggs preferably brought to room temperature for about 30 minutes if time allows
  • 80 g all-purpose flour ⅔ cup
  • 80 g cocoa powder ¾ cup
  • 2 g kosher salt ½ teaspoon
  • 4 g vanilla extract 1 teaspoon
  • 160 g bittersweet or semi-sweet chocolate chips 1 cup, divided for the batter and topping

Equipment

  • Metal 8 × 8-inch baking pan
  • Parchment paper
  • Large mixing bowl
  • Small skillet or saucepan for melting butter
  • Measuring spoons
  • Kitchen scale
  • Spatula or offset spatula
  • Wire cooling rack or cutting board

Method

  1. Prepare the Pan: Heat the oven to 325°F and line a metal 8 × 8-inch baking pan with parchment paper.
  2. Melt the Butter: Melt the unsalted butter, preferably in a small skillet or saucepan over the stovetop, until it reaches a very low simmer. Use it while it is still hot rather than allowing it to cool.
  3. Blend the Sugars: Add the hot melted butter, granulated sugar, and brown sugar to a large mixing bowl. Mix vigorously for 1 minute, until the mixture becomes less grainy and the sugar is thoroughly saturated with butter.
  4. Incorporate the Eggs: Add the eggs to the butter-and-sugar mixture and stir thoroughly until the batter is smooth and the eggs are completely incorporated.
  5. Add the Dry Ingredients: Add the all-purpose flour, cocoa powder, kosher salt, and vanilla extract. Stir just until the ingredients are combined, avoiding unnecessary mixing.
  6. Fold in the Chocolate Chips: Set aside a handful of the chocolate chips for the topping. Stir the remaining chips into the batter until they are evenly distributed and no dry pockets of flour or cocoa remain.
  7. Fill the Pan: Transfer the brownie batter to the prepared pan. Use a spatula or offset spatula to spread it evenly into the corners and across the surface.
  8. Add the Topping: Scatter the reserved chocolate chips evenly over the top of the brownie batter.
  9. Bake the Brownies: Bake at 325°F for 45–50 minutes. The finished brownies should have a glossy, crinkly surface with several small, hairline cracks beginning to form.
  10. Cool Before Slicing: Let the brownies cool in the pan for at least 30 minutes. Transfer them to a cutting board or wire cooling rack and allow them to cool completely before slicing for cleaner portions.

Notes

  • Use a kitchen scale: Measuring the ingredients by weight is recommended for the most consistent results. If a scale is unavailable, use the scoop-and-level method for the dry ingredients.
  • Measure the salt separately: Because some kitchen scales are not sensitive enough for small 1–2 gram quantities, measure the ½ teaspoon of kosher salt with a measuring spoon if needed.
  • Choose rich cocoa: Dark Dutch-process cocoa powder is recommended for a deep, complex chocolate flavor.
  • Keep the butter hot: For the best glossy, crackly surface, mix the hot melted butter with the sugars immediately rather than letting the butter cool.
  • Pan choice matters: A metal 8 × 8-inch pan works best. Cast iron can produce firmer, crispier edges, while ceramic tends to give a fudgier texture. Glass can be used if necessary, although the brownies may require additional cooking time and may not rise as much.
  • Chocolate variations: White chocolate chips or chopped walnuts, almonds, or pistachios can replace some or all of the chocolate chips.
  • Butter substitution: Melted coconut oil can be used instead of melted butter.
  • Storage: Keep leftover brownies in an airtight container at room temperature for up to 3 days or freeze them for up to 2 months.
  • Check for doneness: Look for slightly puffed edges and a wrinkled, crackly surface with small cracks beginning to appear.
