Ingredients

  • 12 tablespoons unsalted butter
  • 1 cup fresh pineapple chopped
  • 2 tablespoons rum
  • 1¾ cups granulated sugar
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 3 large eggs
  • 1 cup unsweetened natural cocoa powder
  • ⅓ cup all-purpose flour

Equipment

  • Food processor or blender
  • 8-inch square baking pan
  • Small saucepan or pot
  • Large mixing bowl
  • Whisk
  • Mixing spoon or spatula
  • Measuring cups and spoons
  • Parchment paper
  • Wire cooling rack
  • Toothpick

Method

  1. Prepare the Baking Pan: Preheat the oven to 350°F (175°C). Butter an 8-inch square baking pan, then line it with parchment paper. Leave enough paper hanging over the edges to create handles for lifting the brownies out after baking.
  2. Melt the Butter Mixture: Place the unsalted butter, chopped fresh pineapple, and rum in a small saucepan. Warm over low heat until the butter has completely melted.
  3. Blend Until Smooth: Transfer the warm butter, pineapple, and rum mixture to a food processor or blender. Process until the mixture is completely smooth and the pineapple is thoroughly incorporated.
  4. Combine the Sugar and Flavorings: In a large mixing bowl, whisk together the granulated sugar, blended pineapple mixture, salt, and vanilla extract. The mixture will be liquid and yellow in color.
  5. Incorporate the Eggs: Add the eggs one at a time, whisking well after each addition until fully incorporated before adding the next egg.
  6. Add the Cocoa and Flour: Add the unsweetened natural cocoa powder and all-purpose flour to the bowl. Stir until the dry ingredients are just combined, taking care not to overmix the batter.
  7. Fill the Baking Pan: Pour the brownie batter into the prepared square pan and spread it evenly.
  8. Bake the Brownies: Place the pan in the preheated oven and bake for 40–45 minutes. To check for doneness, insert a toothpick into the center. It should come out with moist crumbs attached, but no wet batter.
  9. Cool in the Pan: Transfer the pan to a wire rack and let the brownies cool for 20 minutes. This resting period allows them to settle before removal.
  10. Remove and Finish Cooling: Use the parchment paper overhang to lift the brownies out of the pan carefully. Place them on the wire rack and allow them to finish cooling before cutting into squares.

Notes

  • Use fresh pineapple, chopped into small pieces, for the best result. Blend it thoroughly with the melted butter and rum until completely smooth.
  • Keep the saucepan over low heat while melting the butter to avoid overheating the mixture.
  • Add the eggs individually, whisking after each addition to help incorporate them evenly into the batter.
  • Stir the cocoa powder and flour only until combined. Overmixing may affect the brownies' tender, fudgy texture.
  • Line the baking pan with parchment paper, leaving an overhang on the sides to make removing the brownies easier.
  • Begin checking for doneness at around 40 minutes. A toothpick inserted into the center should come out with moist crumbs rather than wet batter.
  • Allow the brownies to cool in the pan for 20 minutes before lifting them onto the wire rack.
  • The source lists a 40-minute cook time, while the instructions allow 40–45 minutes of baking. Actual baking time may vary.
  • For the neatest slices, let the brownies finish cooling before cutting them.
