Ingredients

Peanut Butter Cupcakes
  • 1 ¼ cups 156g all-purpose flour, spooned and leveled
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup 120ml canola or vegetable oil
  • ½ cup 125g creamy peanut butter
  • 1 cup 200g packed light or dark brown sugar
  • 1 large egg at room temperature
  • ⅓ cup 80g sour cream, at room temperature
  • 1 ½ teaspoons pure vanilla extract
  • ¾ cup 180ml whole milk, at room temperature
  • ⅓ cup 40g very finely crushed or chopped peanuts
Chocolate Peanut Butter Frosting
  • 1 cup 16 tablespoons; 226g unsalted butter, softened to room temperature
  • 3 ½ cups 420g confectioners’ sugar
  • ½ cup 41g unsweetened natural or Dutch-process cocoa powder
  • 3 tablespoons 45ml heavy cream or milk
  • ⅓ cup 80g creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • Mini peanut butter cups or chopped peanuts optional, for garnish

Equipment

  • 12-cup muffin pan
  • 2–3 additional cupcake liners for the extra cupcakes
  • Cupcake liners
  • Medium mixing bowl
  • Large mixing bowl
  • Whisk
  • Handheld electric mixer or stand mixer with whisk or paddle attachment
  • Measuring cups and spoons
  • Rubber spatula or spoon
  • Wire cooling rack
  • Piping bag
  • Cupcake carrier, for storage or transport

Method

  1. Prepare the Oven and Pans: Preheat the oven to 350°F (177°C), line a 12-cup muffin pan with cupcake liners, and place 2–3 additional liners in a second pan because the recipe yields about 14–15 cupcakes.
  2. Combine the Dry Ingredients: Whisk the flour, baking soda, and salt together in a medium bowl until evenly combined, then set aside.
  3. Mix the Wet Ingredients: In a large bowl, use a whisk, handheld mixer, or stand mixer fitted with a whisk or paddle attachment to combine the oil, creamy peanut butter, brown sugar, egg, sour cream, and vanilla extract.
  4. Finish the Batter: Add the flour mixture, milk, and finely crushed peanuts to the wet mixture, then whisk or beat just until everything is completely combined; avoid overmixing, as the finished batter will be slightly thick.
  5. Fill the Liners: Spoon or pour the batter into the prepared cupcake liners, filling each one only about two-thirds full to help prevent the batter from baking over the sides.
  6. Bake the Cupcakes: Bake at 350°F (177°C) for 21–23 minutes, or until a toothpick inserted into the center comes out clean and the cupcake tops spring back gently when touched.
  7. Cool the Cupcakes: Transfer the baked cupcakes to cool completely before adding the frosting.
  8. Make the Frosting: Beat the softened butter with a handheld or stand mixer fitted with a paddle or whisk attachment on medium speed for about 2 minutes, until creamy.
  9. Add the Chocolate Base: Add the confectioners’ sugar, cocoa powder, and heavy cream or milk, then beat on low speed for 30 seconds.
  10. Add the Peanut Butter: Add the creamy peanut butter, vanilla extract, and salt, then increase the mixer to medium-high speed and beat for 2 minutes, until the frosting is thoroughly combined.
  11. Adjust the Frosting: If the frosting is too thin, add ¼ cup more confectioners’ sugar; if it is too thick, add another 1–2 tablespoons of cream or milk. Taste and add extra peanut butter or a pinch of salt if desired.
  12. Frost the Cupcakes: Once the cupcakes are completely cool, frost them using a piping bag; a basic tall swirl can be created with an Ateco #849 piping tip.
  13. Garnish the Cupcakes: Finish the frosted cupcakes with a mini peanut butter cup or chopped peanuts, if desired.
  14. Make Mini Cupcakes: For approximately 35 mini cupcakes, use the same 350°F (177°C) oven temperature and bake for about 11–13 minutes.
  15. Store the Cupcakes: Cover leftover cupcakes and refrigerate them for up to 5 days.

Notes

  • Make Ahead: The cupcakes can be prepared 1 day ahead, covered, and kept at room temperature or refrigerated. The frosting can also be prepared 1 day ahead and refrigerated until needed.
  • Freezing: Frosted or unfrosted cupcakes can be frozen for 2–3 months. Thaw them overnight in the refrigerator.
  • Oil: Melted coconut oil can replace the canola or vegetable oil. Melted butter is not recommended because it does not provide the same moisture.
  • Peanut Butter: Processed creamy peanut butter such as Jif or Skippy is recommended for the best texture. Avoid oily or natural-style peanut butter.
  • Milk: Whole milk or buttermilk is recommended, although 2% milk and nondairy milk can also be used.
  • Peanuts: Chop the peanuts very finely so they blend into the cupcakes and provide peanut flavor without noticeable large pieces. Salted peanuts work especially well for a salty-sweet flavor.
  • Room-Temperature Ingredients: Bring refrigerated ingredients to room temperature so the batter combines smoothly and evenly.
  • Cake Option: The batter can also be used for an 11 × 7-inch cake or potentially a small two-layer cake. For a larger cake or layer cake, prepare the batter twice rather than doubling the recipe.
