Ingredients

For the Cupcakes
  • 1⅔ cups all-purpose flour 200g
  • 1¼ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 cup granulated sugar 200g
  • ½ cup unsalted butter softened (113g)
  • 2 eggs room temperature
  • 2 teaspoons vanilla extract
  • ½ cup sour cream room temperature (120g)
  • ⅓ cup whole milk room temperature (80mL)
  • ¼ cup rainbow jimmies 50g
For the Vanilla Buttercream
  • 1 cup unsalted butter room temperature (113g)
  • ⅛ teaspoon salt
  • 1 pound confectioners’ sugar 450g
  • 3 to 4 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Colorful jimmies or sprinkles for garnish

Equipment

  • Stand mixer fitted with a paddle attachment
  • 12-cup muffin tin
  • Paper cupcake liners
  • Small mixing bowl
  • Whisk
  • ¼-cup dry measuring cup or 2-ounce spring-loaded scoop
  • Wire cooling rack
  • Piping bag
  • Large closed star piping tip
  • Kitchen scale, if available, for accurately measuring flour

Method

  1. Prepare the Oven: Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. Combine Dry Ingredients: In a small mixing bowl, whisk together the flour, baking powder, salt, and baking soda until evenly combined.
  3. Cream Butter Sugar: Add the softened butter and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed for about 3 minutes, until the mixture is light and fluffy.
  4. Add Eggs Vanilla: Add the eggs and vanilla extract to the butter mixture. Mix on medium-low speed until the eggs are incorporated.
  5. Add Dairy: Add the room-temperature sour cream and whole milk, then mix until the ingredients are combined.
  6. Finish the Batter: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until the batter becomes smooth. Avoid overmixing once the flour has been incorporated.
  7. Fold in Sprinkles: Gently fold the rainbow jimmies into the finished batter, distributing them evenly without overmixing.
  8. Portion the Batter: Use a ¼-cup dry measuring cup or a 2-ounce spring-loaded scoop to portion the batter into the prepared liners. Level the scoop before adding each portion.
Fill each liner about two-thirds full, taking care not to overfill them; a small amount of batter may remain.
  9. Bake the Cupcakes: Bake at 350°F for 18 to 23 minutes, or until the tops are dry and the centers feel springy when gently touched.
  10. Cool the Cupcakes: Transfer the baked cupcakes to a wire rack and allow them to cool.
  11. Cream the Butter: While the cupcakes cool, place the room-temperature butter and salt in the stand mixer fitted with a paddle attachment, or use a large bowl with a handheld mixer. Beat on medium speed for 2 minutes, or until creamy.
  12. Add Sugar Cream: Sift in the confectioners’ sugar, then add 3 tablespoons of heavy cream and the vanilla extract. Beat on low speed for 1 minute, just until the ingredients are combined.
  13. Adjust Frosting: If the buttercream seems dry, add the remaining tablespoon of heavy cream 1 teaspoon at a time, mixing as needed until the frosting reaches a creamy consistency.
  14. Whip the Buttercream: Increase the mixer speed to medium and beat for 2 minutes, until the buttercream is fluffy and creamy.
  15. Pipe the Frosting: Transfer the buttercream to a piping bag fitted with a large closed star tip. Pipe approximately 3 to 4 tablespoons of buttercream onto each cooled cupcake.
  16. Add Sprinkles: Finish the frosted cupcakes with additional colorful jimmies or sprinkles for decoration.

Notes

  • Measure the flour accurately: Weighing the flour is the most reliable approach. If using cups, fluff the flour, spoon it into the measuring cup, then level the top with a knife.
  • Bring ingredients to room temperature: Allow the refrigerated ingredients to sit out for about an hour before beginning so they incorporate more easily.
  • Avoid overmixing: Once the flour has been incorporated and the batter is smooth, stop mixing. Excessive mixing can make the cupcakes tough rather than light and fluffy.
  • Portion carefully: A ¼-cup dry measuring cup or 2-ounce spring-loaded scoop helps keep the cupcakes evenly sized and prevents the liners from being overfilled.
  • Watch the filling level: Keep each liner around two-thirds full. Overfilled liners can cause the batter to spill over the edges during baking.
  • Use enough cream only as needed: Start the buttercream with 3 tablespoons of heavy cream and add the fourth tablespoon gradually if the frosting appears dry.
