Ingredients

For the Honey Cupcakes
  • - 1/2 cup milk
  • - 1/2 cup vegetable oil
  • - 1/4 cup honey
  • - 2 large eggs
  • - 1 teaspoon vanilla extract
  • - 3/4 cup granulated sugar
  • - 1 3/4 cups all-purpose flour
  • - 1 teaspoon baking powder
  • - 1/4 teaspoon salt
For the Honey Buttercream
  • - 1 stick 1/2 cup butter, softened
  • - 1/4 cup honey
  • - 2 1/2 cups powdered sugar
  • - 1 teaspoon vanilla extract
  • - Pinch of salt

Equipment

  • 12-cup muffin pan
  • 12 paper cupcake liners
  • Large mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Stand mixer fitted with a paddle attachment
  • Rubber spatula
  • Wire cooling rack
  • Piping bag
  • Piping tip of your choice

Method

For the Honey Cupcakes
  1. Prepare the Oven and Pan: Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper cupcake liners.
  2. Combine the Wet Ingredients: In a large mixing bowl, whisk together the milk, vegetable oil, honey, eggs, and vanilla extract until the ingredients are evenly combined.
  3. Incorporate the Sugar: Add the granulated sugar to the wet mixture and whisk until it is thoroughly incorporated.
  4. Mix the Dry Ingredients: Add the all-purpose flour, baking powder, and salt to the bowl. Mix until combined and no large lumps of flour remain. Avoid mixing more than necessary.
  5. Fill the Cupcake Liners: Divide the batter evenly among the 12 prepared liners, filling each approximately two-thirds full.
  6. Bake the Cupcakes: Place the pan in the preheated oven and bake for 15–17 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Cool Completely: Remove the cupcakes from the oven and transfer them to a wire cooling rack. Allow them to cool completely before adding the buttercream.
For the Honey Buttercream
  1. Beat the Butter and Honey: Place the softened butter and honey in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed for about 30 seconds, or until the mixture is well combined.
  2. Add the Remaining Ingredients: Reduce the mixer speed to low. Gradually add the powdered sugar, vanilla extract, and a pinch of salt, mixing until incorporated.
  3. Whip Until Fluffy: Increase the mixer speed to high and beat for 1–2 minutes, until the buttercream becomes light and fluffy.
  4. Pipe the Frosting: Transfer the finished buttercream to a piping bag fitted with your preferred piping tip. Pipe the frosting onto the completely cooled cupcakes as desired.
  5. Store the Cupcakes: Place leftover cupcakes in an airtight container and refrigerate for up to three days.

Notes

  • Measure accurately: Use the specified quantities for the flour, sugar, honey, and other ingredients to maintain the intended cupcake texture and sweetness.
  • Use softened butter: Allow the buttercream butter to soften before mixing so it combines smoothly with the honey.
  • Avoid overmixing: Mix the cupcake batter only until no large flour lumps remain to help preserve a tender crumb.
  • Fill evenly: Fill each paper liner approximately two-thirds full to allow room for the cupcakes to rise.
  • Check for doneness: Begin checking the cupcakes at 15 minutes. They are ready when a toothpick inserted into the center comes out clean.
  • Cool before frosting: Make sure the cupcakes have cooled completely before piping on the buttercream to prevent it from softening or melting.
  • Adjust the decoration: Use any piping tip you prefer to create simple swirls or more decorative frosting patterns.
  • Store properly: Keep leftover cupcakes in an airtight container in the refrigerator for up to three days.
