Moist Chocolate Beetroot Cupcakes

Rich, tender chocolate cupcakes made extra moist using pureed cooked beetroot, then finished with a creamy beetroot chocolate cream cheese frosting.
Their deep red color, soft texture, and decadent chocolate flavor make them an irresistible dessert.

Ingredients
  

For the Cupcakes
  • ¾ cup vegetable oil
  • 2 cups flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • cups sugar
  • ½ cup cocoa powder
  • 2 cups pureed cooked beets from about 4 beets
  • 1 teaspoon vanilla
For the Frosting
  • cups butter
  • 8 oz cream cheese
  • 5 cups powdered sugar
  • ½ cup pureed cooked beets from about 1 beet
  • ½ cup semi-sweet chocolate melted

Method
 

  1. Cook the Beets: Boil all 5 beets in a medium saucepan at a light boil for 30 minutes, or until the centers are soft.
  2. Cool the Beets: Remove the cooked beets from the saucepan and allow them to cool.
  3. Peel the Beets: Once the beets are cool enough to handle, use your fingers to remove the skins, then trim away the stem and tail from each beet.
  4. Puree the Beets: Place all 5 peeled, trimmed beets in a food processor and puree until smooth. Set the beet puree aside.
  5. Combine Wet Ingredients: In a large bowl, mix the vegetable oil, eggs, sugar, 2 cups of the beet puree, vanilla, and buttermilk until combined.
  6. Add Dry Ingredients: Add the flour, baking powder, salt, and cocoa powder to the wet mixture, combining the ingredients to form the cupcake batter.
  7. Fill the Liners: Divide the batter among the cupcake liners, filling each one nearly to the top while leaving about ¼ inch of space.
  8. Bake the Cupcakes: Bake at 350°F for 20–25 minutes, or until the centers come out dry when checked.
  9. Cool the Cupcakes: Remove the baked cupcakes from the oven and let them cool completely before frosting.
  10. Beat the Butter Cream Cheese: Place the butter and cream cheese in the bowl of a stand mixer and whisk on high until the mixture becomes soft and airy.
  11. Add the Powdered Sugar: Add the powdered sugar and mix on low until it is incorporated and the frosting is soft.
  12. Add Beetroot Chocolate: Add the ½ cup beet puree and melted semi-sweet chocolate to the frosting.
  13. Finish the Frosting: Whisk the mixture until everything is fully combined.
  14. Firm the Frosting: If the frosting needs to become firmer, refrigerate it for a few minutes.
  15. Frost the Cupcakes: Spread or pipe the finished beetroot chocolate cream cheese frosting over the cooled cupcakes, then serve and enjoy.

Notes

  • Cook the beets until their centers are soft before pureeing them so they blend smoothly into the cupcake batter and frosting.
  • The recipe uses all 5 cooked beets for the puree, but only 2 cups are incorporated into the cupcakes; reserve ½ cup for the frosting.
  • Allow the cupcakes to cool before adding the frosting so the creamy topping stays in place.
  • The frosting can be refrigerated for a few minutes if it seems too soft to spread or pipe neatly.
  • Fill the cupcake liners to nearly the top, leaving approximately ¼ inch of space as specified in the original recipe.
  • Bake until the cupcake centers come out dry when checked, using the stated 20–25 minute baking range as a guide.
