Moist Cherry Almond Muffins for Any Occasion

Moist, tender muffins packed with sweet cherries, fragrant almond flavor, and sliced almonds.
A simple yogurt-based batter produces a soft crumb, while the high-temperature start helps create beautifully risen muffins with golden tops.

Ingredients
  

Dry Ingredients
  • 2 cups 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup 100 grams granulated sugar or brown sugar
Wet Ingredients
  • 1 large egg slightly beaten
  • 1 cup 227 grams yogurt
  • cup 80 ml canola oil, or vegetable or safflower oil
  • ½ teaspoon vanilla extract
  • 1 teaspoon almond extract
Fruit and Nuts
  • cups 300 grams/11 ounces cherries, halved and pitted
  • ½ cup slivered or sliced almonds preferably toasted
  • Extra sliced or slivered almonds not toasted, for sprinkling on top

Method
 

  1. Prepare the Oven and Pan: Preheat the oven to 425°F/220°C. Grease 12 standard muffin cups or line them with muffin liners.
  2. Combine the Dry Ingredients: Sift the flour, baking powder, baking soda, and salt into a large bowl. Add the sugar and mix until the dry ingredients are evenly combined.
  3. Mix the Wet Ingredients: In a separate medium bowl, combine the slightly beaten egg, yogurt, oil, vanilla extract, and almond extract, mixing until blended.
  4. Make the Batter: Pour the wet mixture into the bowl of dry ingredients. Using a wooden spoon or rubber spatula, gently fold everything together just until combined. Avoid overmixing; the finished batter should remain quite thick and lumpy.
  5. Add the Cherries and Almonds: Gently fold the halved, pitted cherries and ½ cup of slivered or sliced almonds into the batter. Fold carefully to help prevent the cherries from staining the batter excessively.
  6. Fill the Muffin Cups: Divide the thick batter evenly among the prepared muffin cups, filling them almost to the top. Sprinkle additional, untoasted sliced or slivered almonds over the tops if desired.
  7. Start Baking: Place the muffins in the preheated 425°F/220°C oven and bake for 3 minutes.
  8. Reduce the Temperature: After the initial 3 minutes, reduce the oven temperature to 375°F/190°C without removing the muffins.
  9. Finish Standard Muffins: Continue baking standard muffins for an additional 12–17 minutes, until a toothpick inserted into the center comes out clean.
  10. Finish Jumbo Muffins: For jumbo muffins, continue baking for an additional 22–27 minutes after reducing the temperature to 375°F/190°C, checking for doneness with a toothpick inserted into the center.
  11. Protect the Tops if Needed: If the muffins begin to brown too much before they are finished baking, loosely cover them with aluminum foil.
  12. Cool the Muffins: Let the baked muffins cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.

Notes

  • If almond extract is unavailable, it can be omitted. The muffins will still have a delicious cherry flavor.
  • Halve and pit the cherries before adding them to the batter.
  • Fold the cherries gently into the thick batter to help minimize staining.
  • The almonds are better toasted when mixed into the batter, while the extra almonds sprinkled over the tops should remain untoasted.
  • For standard muffins, the total baking time after the initial 3 minutes at 425°F/220°C is 12–17 minutes at 375°F/190°C.
  • Jumbo muffins need an additional 22–27 minutes at 375°F/190°C after the initial 3-minute bake.
  • Use a toothpick inserted into the center to check doneness; it should come out clean.
  • If the tops become too brown during baking, loosely cover the muffins with aluminum foil.
  • Allow the muffins to cool for 10 minutes before transferring them to a wire rack.
  • They are best enjoyed on the day they are baked but can be stored at room temperature in an airtight container for up to 2 additional days.
  • Muffins can be frozen for up to 2 months.
