Ingredients

  • - 1 cup whole milk
  • - 1 cup old-fashioned oats
  • - 1 ¼ cups all-purpose flour 156 g
  • - 1 teaspoon baking powder
  • - ½ teaspoon baking soda
  • - ½ teaspoon ground cinnamon
  • - ½ teaspoon salt
  • - ½ cup unsalted butter melted
  • - ½ cup maple syrup
  • - 1 large egg at room temperature
  • - 1 teaspoon vanilla extract
  • - 1 ½ cups blackberries halved
Optional topping:
  • - Additional oats for sprinkling
  • - Coarse sugar for sprinkling

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Kitchen scale for measuring flour
  • Whisk
  • Rubber spatula or wooden spoon
  • 12-cup muffin pan
  • Nonstick cooking spray or 12 cupcake liners
  • Ice cream scoop or large spoon
  • Wire cooling rack
  • Toothpick for testing doneness

Method

  1. Soak the Oats: Combine the whole milk and old-fashioned oats in a bowl. Leave the mixture to soak for 20 minutes, allowing the oats to soften before adding them to the batter.
  2. Prepare the Oven and Muffin Pan: Preheat the oven to 425°F. Lightly coat a 12-cup muffin pan with nonstick cooking spray or line each cup with a cupcake liner. Set the prepared pan aside.
  3. Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Stir until the ingredients are evenly distributed.
  4. Combine the Wet Ingredients: In a separate bowl, whisk together the melted unsalted butter, maple syrup, room-temperature egg, and vanilla extract until the mixture is well combined.
  5. Make the Muffin Batter: Add the wet mixture and the milk-soaked oats to the bowl of dry ingredients. Stir gently until the ingredients are just combined. Avoid overmixing to help maintain a tender muffin texture.
  6. Fold in the Blackberries: Add the halved blackberries to the batter. Using a rubber spatula, fold them in gently so they are distributed throughout without being crushed unnecessarily.
  7. Fill the Muffin Pan: Divide the batter evenly among the 12 prepared muffin cups, filling each one to the top. For more even portions, use an ice cream scoop. If desired, sprinkle additional oats and coarse sugar over the tops.
  8. Begin Baking at High Temperature: Place the muffin pan in the preheated oven and bake at 425°F for 5 minutes. This initial high-temperature stage helps the muffins rise.
  9. Reduce the Oven Temperature: Without removing the muffins from the oven, lower the temperature to 350°F. Continue baking for 15–18 minutes, until the muffins are cooked through.
  10. Check for Doneness: Insert a toothpick into the center of a muffin. The muffins are ready when the toothpick comes out clean.
  11. Cool the Muffins: Let the muffins rest in the pan for 5 minutes after baking. Then carefully transfer them to a wire rack to cool further before serving.

Notes

  • Soak the oats: Allow the old-fashioned oats to sit in the milk for the full 20 minutes. This softens the oats and helps create a moist muffin texture.
  • Use room-temperature ingredients: Bring the egg and other refrigerated ingredients to room temperature before mixing so the batter combines more evenly.
  • Check blackberry sweetness: If your blackberries are less sweet than expected, the original recipe suggests adding an extra ⅓ cup of maple syrup.
  • Handle the berries gently: Fold the halved blackberries into the batter carefully to help preserve their shape and distribute them throughout the muffins.
  • Avoid overmixing: Stir the batter only until the ingredients are combined to help keep the muffins tender.
  • Fill the muffin cups fully: Divide the batter evenly among the 12 cups, filling each to the top as directed.
  • Follow the two-temperature baking method: Start at 425°F for 5 minutes, then reduce the oven to 350°F and bake for another 15–18 minutes.
  • Test before removing: Insert a toothpick into the center of a muffin. It should come out clean when the muffins are done.
  • Allow time to cool: Leave the muffins in the pan for 5 minutes before transferring them to a wire rack.
  • Try an optional topping: Sprinkle oats and coarse sugar over the batter before baking for an appealing finish.
