A moist Italian-inspired lemon ricotta cake featuring bright lemon zest, creamy whole-milk ricotta, sweet macerated strawberries, and softly whipped cream. It is simple enough for home baking yet elegant enough for entertaining.

Ingredients
  

For the Lemon Ricotta Cake
  • 1 1/3 cups 188g all-purpose flour, scooped and leveled to measure
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup 200g granulated sugar
  • 1/2 cup 113g unsalted butter, softened
  • 2 1/2 tablespoons lemon zest
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups 356g whole-milk ricotta cheese
For the Topping
  • 1 lb. fresh strawberries diced or sliced
  • 3 1/2 tablespoons 42g granulated sugar, divided
  • 1 cup 235ml heavy cream

Method
 

  1. Prepare the Oven and Pan: Preheat the oven to 350°F (175°C). Butter a 9-inch springform pan, line the bottom with a round of parchment paper, then butter the parchment as well.
  2. Combine the Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined. Set the mixture aside.
  3. Cream the Butter Mixture: In the bowl of an electric stand mixer fitted with the paddle attachment, beat the softened butter, granulated sugar, and lemon zest until the mixture becomes pale and fluffy.
  4. Add the Eggs and Vanilla: Add the eggs one at a time, mixing after each addition. The mixture may look lumpy at this stage; this is expected. Blend in the vanilla extract.
  5. Add the First Portion of Flour: Mix in half of the prepared flour mixture just until it is combined with the wet ingredients. Avoid mixing longer than necessary.
  6. Incorporate the Ricotta: Add the whole-milk ricotta and mix just until combined.
  7. Finish the Batter: Add the remaining flour mixture and mix only until incorporated. Gently fold the batter with a rubber spatula to make sure everything is evenly distributed.
  8. Fill the Pan: Transfer the batter to the prepared springform pan and spread it into an even layer.
  9. Bake the Cake: Place the cake in the preheated 350°F (175°C) oven and bake until the cake is set, about 45–50 minutes. A toothpick inserted into the cake may come out moist, but it should not have wet batter on it.
  10. Cool the Cake: Allow the cake to cool in the pan for 10 minutes. Run a knife around the edge to loosen any portions that may have stuck, then carefully remove the springform ring and continue cooling the cake.
  11. Macerate the Strawberries: Place the diced or sliced strawberries in a medium mixing bowl and toss them with 2 tablespoons of the granulated sugar. Cover and refrigerate while the cake bakes and cools.
  12. Whip the Cream: In a separate medium mixing bowl, use an electric hand mixer to whip the heavy cream until soft peaks form.
  13. Sweeten the Cream: Add the remaining 1 1/2 tablespoons granulated sugar and continue whipping until stiff peaks form. Refrigerate the whipped cream until the cake is ready to serve.
  14. Serve the Cake: Once the cake has cooled, slice it and serve with the macerated strawberries and chilled whipped cream.

Notes

  • Measure the flour by scooping it into the measuring cup and leveling the top for the specified 188g quantity.
  • Make sure the butter is softened before creaming it with the sugar and lemon zest.
  • The batter may appear lumpy after the eggs are added; this is noted in the original method and does not mean the batter has gone wrong.
  • Add the flour mixture in two portions, mixing only until combined each time to maintain the cake's tender texture.
  • The cake is ready when it is set and a toothpick comes out moist but without wet batter.
  • Let the cake cool for 10 minutes before removing the springform ring, then continue cooling before slicing.
  • Refrigerate the sugared strawberries while the cake bakes and cools so they have time to become lightly juicy.
  • Keep the whipped cream refrigerated until serving for the best texture.
