Ingredients

For the Cake
  • 2½ cups all-purpose flour 300g
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1⅓ cups vegetable oil 320ml
  • 1 cup packed light brown sugar 220g
  • 1 cup granulated sugar 200g
  • 4 large eggs at room temperature
  • 2 teaspoons vanilla extract 10ml
  • 3 cups grated carrots from 1 pound of carrots (315g)
  • 1 cup chopped pecans 120g
For the Cream Cheese Frosting
  • 1 8-ounce/227g block cream cheese, at room temperature
  • 1 cup unsalted butter softened (227g)
  • 1 teaspoon vanilla extract
  • 4 to 5 cups powdered sugar 480–600g

Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Electric hand mixer or stand mixer with paddle attachment
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Two 9-inch round cake pans
  • Parchment paper
  • Wire cooling rack
  • Cake stand or serving platter
  • Serrated knife

Method

  1. Prepare the Cake Pans: Preheat the oven to 350°F. Lightly grease two 9-inch round cake pans with baking spray or butter, then line the bottoms with parchment paper.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until evenly combined.
  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the vegetable oil, packed light brown sugar, granulated sugar, room-temperature eggs, and vanilla extract until the mixture is well combined.
  4. Make the Batter: Pour the wet mixture into the bowl of dry ingredients. Stir just until the ingredients are combined and only a few streaks of flour remain. Avoid unnecessarily mixing the batter.
  5. Add Carrots Pecans: Fold the grated carrots and chopped pecans into the batter until they are evenly distributed.
  6. Fill Cake Pans: Divide the batter evenly between the two prepared 9-inch cake pans.
  7. Bake the Cake: Bake at 350°F for 30 to 35 minutes, or until a toothpick inserted into the center of each cake layer comes out clean.
  8. Cool the Layers: Place the cake pans on a wire cooling rack and allow the layers to cool completely in the pans. Once completely cooled, invert the layers and carefully remove the parchment paper.
  9. Beat the Butter: For the frosting, place the softened butter in a large mixing bowl. Using an electric hand mixer or a stand mixer fitted with the paddle attachment, beat on medium speed until the butter is very soft and smooth, about 1 minute.
  10. Add Cream Cheese: Add the room-temperature cream cheese and beat until the mixture becomes fluffy, about 30 seconds.
  11. Add Powdered Sugar: Reduce the mixer to low speed and gradually add the powdered sugar. Use 4 cups for a softer frosting or up to 5 cups for a firmer, sweeter frosting.
  12. Finish the Frosting: Scrape down the sides of the bowl and add the vanilla extract. Beat on medium-low speed for about 1 minute, until the frosting is fluffy and easily spreadable.
  13. Layer the Cake: Place one completely cooled cake layer top-side up on a cake stand or serving platter. Spread ¾ cup of frosting evenly over the top, taking it all the way to the edge.
  14. Stack the Layers: Place the second cake layer top-side down over the frosted first layer.
  15. Frost the Cake: Spread the remaining cream cheese frosting over the top and sides of the assembled cake until evenly covered.
  16. Decorate the Cake: If desired, reserve some frosting for piping decorations onto the cake, or press chopped toasted pecans onto the frosting.
  17. Chill Before Slicing: Refrigerate the assembled cake for 30 minutes to allow the frosting to set before slicing.
  18. Store Leftovers: Keep any leftover cake covered and refrigerated for up to 1 week.

Notes

  • Peel the carrots before grating them, as the peels can have a slightly bitter taste.
  • Make sure the cake layers are completely cool before frosting. Warm layers can soften the cream cheese frosting and cause the top layer to slide.
  • Chill the assembled cake for 30 minutes before slicing. This helps firm the frosting and keeps the layers stable while making cleaner cuts.
  • A serrated knife works particularly well for slicing this cake because it can move cleanly through the tender cake and chunky pecan pieces.
  • The powdered sugar amount can be adjusted between 4 and 5 cups depending on whether you prefer a softer or firmer, sweeter frosting.
  • Keep leftover cake covered and refrigerated for up to 1 week.
