Ingredients

For the Muffins
  • 1 1/2 cups all-purpose flour
  • 1 cup quick-cooking oatmeal
  • 3/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk or apple cider
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup finely chopped apple
For the Streusel Topping
  • 1/4 cup quick-cooking oatmeal
  • 2 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter
  • 1/4 teaspoon ground cinnamon

Equipment

  • 12-cup muffin pan
  • Paper muffin liners or cooking spray
  • Large mixing bowl
  • Separate medium mixing bowl
  • Small bowl
  • Whisk
  • Mixing spoon or spatula
  • Toothpick

Method

  1. Prepare the Muffin Pan: Preheat the oven to 400°F. Spray a 12-count muffin tin with cooking spray or line it with paper liners, then set aside.
  2. Combine Dry Ingredients: In a large bowl, combine the all-purpose flour, quick-cooking oatmeal, light brown sugar, ground cinnamon, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk or apple cider, unsweetened applesauce, vegetable oil, and pure vanilla extract until combined.
  4. Combine the Batter: Make a well in the center of the dry ingredients. Pour in the wet mixture and stir just until the ingredients are combined, being careful not to overmix.
  5. Add the Apples: Fold the finely chopped apple into the batter until it is evenly distributed.
  6. Fill the Muffin Cups: Divide the batter evenly among the 12 prepared muffin cups.
  7. Prepare the Streusel: In a small bowl, combine the quick-cooking oatmeal, all-purpose flour, brown sugar, melted butter, and ground cinnamon.
  8. Top the Muffins: Sprinkle the prepared streusel mixture evenly over each muffin.
  9. Bake the Muffins: Bake at 400°F for 15 to 20 minutes, or until a toothpick inserted into the center of the muffins comes out clean.
  10. Check for Doneness: Test a muffin at the end of the baking time with a toothpick. The muffins are ready when the toothpick comes out clean.

Notes

  • Use finely chopped apple so the pieces distribute evenly throughout the muffin batter.
  • Quick-cooking oatmeal is used in both the muffins and the streusel topping.
  • The milk can be replaced with apple cider as specified in the original recipe.
  • Mix the wet and dry ingredients only until combined to help maintain the intended tender texture.
  • Divide the batter evenly among all 12 muffin cups for consistent portions.
  • The streusel should be sprinkled over the muffins before baking.
  • Begin checking the muffins at 15 minutes, as the source gives a baking range of 15 to 20 minutes.
  • A toothpick inserted into the center should come out clean when the muffins are done.
