Ingredients
  

For the Donuts
  • 2 ½ teaspoons unsalted butter
  • 1 cup 120 grams all-purpose flour
  • ½ cup 107 grams light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup 114 grams full-fat sour cream
  • 1 large egg
For the Vanilla Glaze
  • ½ cup 57 grams powdered sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons milk

Method
 

  1. Brown the Butter: Melt the unsalted butter in a medium-sized saucepan. As it cooks, the butter will foam and orangey-brown bits will begin forming along the bottom of the pan. This process takes about 5 minutes.
  2. Cool the Butter: Remove the saucepan from the heat and allow the browned butter to cool before adding it to the batter.
  3. Prepare the Oven: Preheat the oven to 350°F (175°C). Spray the donut pan thoroughly with non-stick spray and set it aside.
  4. Combine the Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, packed light brown sugar, salt, and baking powder until evenly combined.
  5. Mix the Wet Ingredients: In a separate bowl, combine the cooled browned butter with the full-fat sour cream and egg, mixing them together.
  6. Form the Batter: Gently fold the wet mixture into the dry ingredients until the batter is combined, taking care not to overwork it.
  7. Fill the Donut Pan: Spoon the prepared batter into the greased donut pan, distributing it among the donut molds.
  8. Bake the Donuts: Place the filled pan in the preheated 350°F (175°C) oven and bake for 20–25 minutes, or until the donuts spring back when lightly pressed.
  9. Cool in the Pan: Remove the baked donuts from the oven and let them cool in the pan for 10 minutes.
  10. Finish Cooling: Remove the donuts from the pan and allow them to cool completely before adding the glaze.
  11. Prepare the Glaze: In a small bowl, whisk together the powdered sugar, vanilla extract, and milk until the mixture is smooth and free of lumps.
  12. Adjust the Glaze: If the glaze is too thick, add more milk until it reaches a suitable consistency for dipping.
  13. Glaze the Donuts: Dip the tops of the completely cooled donuts into the vanilla glaze, allowing the glaze to coat the surface.

Notes

  • Brown the butter until you see the orangey-brown bits forming at the bottom of the saucepan; this is the key step that gives the donuts their characteristic browned-butter flavor.
  • Let the browned butter cool before combining it with the other wet ingredients.
  • Gently fold the wet ingredients into the dry ingredients to keep the batter properly combined without unnecessarily working it.
  • The donuts should spring back when lightly pressed when they are ready to come out of the oven.
  • Allow the donuts to cool completely before glazing so the vanilla glaze can coat the tops properly.
  • If the glaze is too thick for dipping, loosen it with additional milk.
