Ingredients

  • 6 oz. dark chocolate coarsely chopped
  • ½ cup 4 oz. unsalted butter
  • ¾ cup 5¼ oz. granulated sugar
  • ¼ cup 2 oz. light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 tablespoon cocoa powder
  • ⅔ cup 2¾ oz. all-purpose flour
  • ¼ cup dried cranberries
  • 1 cup chocolate-covered cranberries or chocolate chips as a substitute
  • 1 cup fresh or frozen cranberries

Equipment

  • 8×8-inch baking pan
  • Parchment paper
  • Lightly greased baking pan
  • Medium mixing bowl
  • Large microwave-safe glass bowl
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Sharp knife
  • Toothpick

Method

  1. Prepare the Pan: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, then lightly grease the pan.
  2. Combine Dry Ingredients: Whisk the all-purpose flour, salt, and cocoa powder together in a medium bowl until evenly combined.
  3. Melt Chocolate Mixture: Place the coarsely chopped dark chocolate and unsalted butter in a large glass bowl. Microwave for 30 seconds, then stir.
Continue microwaving in 30-second intervals, stirring after each one, until the chocolate and butter are completely melted and smooth.
  4. Add Sugars: Add the granulated sugar and light brown sugar to the melted chocolate mixture. Whisk until the sugars are thoroughly incorporated, then allow the mixture to reach room temperature.
  5. Add Eggs Vanilla: Whisk the 2 eggs into the cooled chocolate mixture until combined. Stir in the vanilla extract. Avoid overbeating at this stage, as excessive mixing can produce cakier brownies.
  6. Fold in Flour: Sprinkle the prepared flour mixture over the chocolate mixture. Using a rubber spatula rather than a whisk, gently fold until the batter is nearly combined and only a small amount of flour mixture remains visible.
  7. Add Cranberries: Fold in the dried cranberries, chocolate-covered cranberries or chocolate chips, and fresh or frozen cranberries until they are distributed throughout the batter.
  8. Bake Brownies: Transfer the batter to the prepared pan and bake at 350°F for about 30 minutes, or until a toothpick inserted into the brownies comes out with moist crumbs attached.
  9. Cool Completely: Allow the brownies to cool completely in the pan before cutting, ensuring they are firm enough to slice cleanly.
  10. Cut Brownies: Using a very sharp knife, cut the cooled brownies into 16 equal squares.

Notes

  • Use dark chocolate as specified for a deeper, more intense chocolate flavor.
  • Chocolate-covered cranberries can be replaced with chocolate chips if needed.
  • Fresh or frozen cranberries can be used without changing the recipe method.
  • Do not overbeat after adding the eggs and vanilla; this helps maintain the brownies’ rich, fudgy texture.
  • Fold the flour mixture in gently with a rubber spatula rather than whisking it.
  • Bake until a toothpick comes out with moist crumbs attached rather than completely clean.
  • Let the brownies cool completely before slicing into 16 squares for cleaner cuts.
  • Store in an airtight container at room temperature or in the refrigerator for up to 1 week, or freeze for up to 3 months.
