For the Chocolate Cupcakes
  • - 1 cup semisweet chocolate chips 6 oz / 175 g
  • - ½ cup unsalted butter 4 oz / 115 g
  • - ¾ cup granulated sugar 5.5 oz / 150 g
  • - ¼ teaspoon salt
  • - 1 teaspoon vanilla extract
  • - 3 large eggs at room temperature
  • - ½ cup unsweetened cocoa powder 1.75 oz / 50 g
For the Whipped Cream Topping
  • - 1 cup heavy cream 8 oz / 240 ml, cold
  • - 2½ tablespoons powdered sugar or to taste
  • - 1 teaspoon vanilla extract
  • - Fresh berries for topping

Equipment

  • 12-cup muffin tin
  • 12 cupcake liners
  • Microwave-safe bowl or double boiler
  • Heatproof spatula or mixing spoon
  • Measuring cups and measuring spoons
  • Kitchen scale (optional)
  • Whisk
  • Fine-mesh sieve
  • Electric hand mixer or stand mixer
  • Mixing bowl for whipped cream
  • Wire cooling rack
  • Toothpick
  • Spoon or piping bag with a nozzle for topping
  • Refrigerator for chilling the mixing bowl and beaters

Method

Making the Chocolate Cupcakes
  1. Prepare the Oven and Muffin Tin: Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with cupcake liners so the batter is ready to portion.
  2. Melt the Chocolate and Butter: Place the semisweet chocolate chips and unsalted butter in a microwave-safe bowl.
Microwave in 30-second intervals, stirring after each interval, until the mixture is completely melted and smooth. Alternatively, melt the chocolate and butter together in a double boiler.
  3. Combine the Sugar and Flavorings: Add the granulated sugar, salt, and vanilla extract to the melted chocolate mixture. Stir thoroughly until the ingredients are evenly combined.
  4. Incorporate the Eggs: Add the room-temperature eggs one at a time, beating well after each addition. Continue until the mixture becomes thick, glossy, and uniform.
  5. Fold in the Cocoa Powder: Sift the unsweetened cocoa powder over the chocolate mixture. Gently fold it in until no dry cocoa or visible streaks remain. The finished batter should be dense and rich.
  6. Fill the Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each approximately two-thirds full. Smooth the surfaces gently with the back of a spoon or a spatula.
  7. Bake the Cupcakes: Place the muffin tin in the preheated oven and bake for 15–20 minutes. Check the centers with a toothpick; it should come out with a few moist crumbs rather than wet batter.
  8. Cool the Cupcakes: Leave the cupcakes in the muffin tin for 10 minutes after baking. Carefully transfer them to a wire rack and allow them to cool completely before adding the whipped cream.
Making the Whipped Cream
  1. Chill the Mixing Equipment: Place the mixing bowl and the beaters or whisk in the refrigerator for 15–20 minutes. This step is optional but recommended to help the cream whip more quickly.
  2. Begin Whipping the Cream: Pour the cold heavy cream into the chilled mixing bowl. Using an electric mixer set to medium speed, beat until the cream begins to thicken.
  3. Add the Sugar and Vanilla: Add the powdered sugar and vanilla extract once the cream starts to thicken. Continue beating until soft peaks form.
  4. Adjust the Whipped Cream Consistency: For a firmer topping, continue beating until stiff peaks form. Watch the texture carefully as the cream thickens.
  5. Decorate the Cupcakes: Once the cupcakes are completely cool, spoon the whipped cream onto each one or transfer it to a piping bag for a more decorative finish. Top with fresh berries and serve.

Notes

  • Storage: Store leftover cupcakes in an airtight container in the refrigerator for up to 3 days.
  • Freezing: Freeze the cupcakes without the whipped cream topping for up to 2 months. Add freshly whipped cream and berries after thawing.
  • Egg Temperature: Use 3 large eggs at room temperature to help them blend smoothly into the melted chocolate mixture.
  • Chocolate Melting: If using a microwave, heat the chocolate and butter in 30-second intervals, stirring after each interval to promote even melting.
  • Cocoa Powder: Sift the unsweetened cocoa powder before folding it into the batter to help prevent dry lumps.
  • Avoid Overbaking: Check the cupcakes toward the beginning of the 15–20-minute baking window. A toothpick should emerge with a few moist crumbs, not wet batter.
  • Cooling: Let the cupcakes rest in the tin for 10 minutes before transferring them to a wire rack. Cool them completely before decorating.
  • Whipped Cream: Keep the heavy cream cold for better whipping results. Add powdered sugar and vanilla after the cream begins to thicken.
  • Topping Options: Fresh berries add a fruity contrast to the rich chocolate flavor and create an attractive finish.
  • Sugar Alternatives: The original recipe suggests coconut sugar or a monk fruit sweetener as possible alternatives to granulated sugar, although the flavor and texture may vary.
