Ingredients

Chocolate Ganache
  • ¾ cup heavy whipping cream
  • 1½ tablespoons light corn syrup
  • 12 ounces semi-sweet chocolate finely chopped
White Chocolate Cups
  • 10 ounces pure white chocolate melted and tempered, or melted confectionery coating
  • Red candy coloring
  • Candy-coated chocolate balls

Equipment

  • Microwave-safe bowl
  • Food processor or mixing bowl
  • Microwave
  • Mixing spoon or spatula
  • Food-use-only paintbrush
  • 24 paper candy cups
  • Refrigerator
  • Freezer, if using confectionery coating
  • Pastry bag
  • Large star piping tip

Method

  1. Prepare the Ganache: Combine the heavy whipping cream and light corn syrup in a microwave-safe bowl.
  2. Heat the Cream Mixture: Microwave the cream and corn syrup for 1 minute, then stir well.
  3. Combine Chocolate: Place the finely chopped semi-sweet chocolate in a food processor or mixing bowl, then pour the hot cream mixture over it.
  4. Rest the Chocolate: Leave the chocolate and cream mixture undisturbed for 3 minutes so the heat can soften the chocolate.
  5. Smooth the Ganache: Pulse the mixture in the food processor or stir it in the mixing bowl until completely smooth.
  6. Thicken the Ganache: Allow the ganache to cool for 1 hour, until it has thickened enough for piping.
  7. Color the Chocolate: Color 2 ounces of the white chocolate or confectionery coating with red candy coloring.
  8. Paint the Polka Dots: Using a paintbrush intended only for food use, paint red polka dots onto the inside of 24 paper candy cups.
  9. Set the Decorations: Refrigerate the decorated cups for 5 minutes, or until the red dots have hardened.
  10. Create the Chocolate Shells: Spoon approximately ½ teaspoon of white chocolate into each cup, then use the brush to spread the chocolate up the sides, forming the cup.
  11. Harden the Shells: Refrigerate the cups for 5–8 minutes, until the white chocolate has hardened; if using confectionery coating, freeze the cups instead.
  12. Remove the Paper Cups: Once the chocolate shells are firm, carefully peel away the paper from each white chocolate cup.
  13. Fill the Piping Bag: Transfer the thickened chocolate ganache into a pastry bag fitted with a large star tip.
  14. Pipe the Ganache: Pipe a generous swirl of ganache into each chocolate cup.
  15. Add the Candy Topping: Immediately place one candy-coated chocolate ball on top of each ganache swirl.

Notes

  • Store the finished chocolate truffle cupcakes in an airtight container at room temperature for up to two weeks.
  • Allow the ganache to cool for the full 1 hour so it becomes thick enough to pipe neatly.
  • Use a paintbrush intended only for food use when creating the red polka dots.
  • Refrigerate the painted candy cups for 5 minutes before adding the white chocolate shell.
  • If using confectionery coating, freeze the chocolate cups rather than refrigerating them to harden the shells.
  • Peel away the paper cups only after the chocolate shells have completely hardened.
  • Add the candy-coated chocolate balls immediately after piping the ganache so they adhere securely.
