Ingredients

For the Vegan Lemon Cupcakes
  • - 2 cups 250 g all-purpose plain flour, spooned and leveled
  • - 1 cup 200 g granulated sugar
  • - 2 tablespoons lemon zest
  • - 3 teaspoons baking powder
  • - A pinch of salt
  • - 1 cup 250 g dairy-free milk
  • - ⅓ cup 80 g neutral-flavored oil
  • - 3 tablespoons 45 g fresh lemon juice
  • - 1 teaspoon vanilla extract
For the Vegan Lemon Buttercream Frosting
  • - ¾ cup 170 g vegan butter, at room temperature, or chilled vegan margarine
  • - 4 cups 400 g powdered sugar or icing sugar, adjusted to taste
  • - 1–3 tablespoons lemon juice adjusted to taste
  • - 1 teaspoon vanilla extract

Equipment

  • 12-cup muffin pan
  • 12 paper cupcake liners
  • Large mixing bowl
  • Whisk
  • Measuring cups and spoons or a kitchen scale
  • Microplane or fine grater for lemon zest
  • Citrus juicer
  • Ice cream scoop or large spoon
  • Electric hand mixer or stand mixer with whisk attachment
  • Rubber spatula
  • Wire cooling rack
  • Piping bag and piping tip (optional, for decorating)

Method

  1. Prepare the Oven and Pan: Preheat the oven to 180°C (350°F). Line a 12-cup muffin pan with paper cupcake liners.
  2. Combine the Lemon Zest and Sugar (Optional): Place the granulated sugar and lemon zest in a large mixing bowl. Rub them together with your fingertips until the mixture becomes fragrant, helping release the lemon's aromatic oils.
  3. Mix the Dry Ingredients: Add the all-purpose flour, lemon-sugar mixture if prepared, baking powder, and salt to a large mixing bowl.
Whisk thoroughly until the ingredients are evenly combined and no lumps remain. If you did not rub the zest with the sugar, add the zest along with the other dry ingredients.
  4. Add the Wet Ingredients: Pour in the dairy-free milk, neutral-flavored oil, fresh lemon juice, and vanilla extract. Stir until the ingredients are just combined and a smooth batter forms. Avoid unnecessary mixing.
  5. Fill the Cupcake Liners: Divide the batter evenly among the 12 prepared cupcake liners using an ice cream scoop or large spoon. Fill each cavity approximately three-quarters full.
  6. Bake the Cupcakes: Place the muffin pan in the preheated oven and bake for 20–25 minutes. Check doneness by inserting a toothpick into the center of a cupcake. It should come out without wet batter; a few moist crumbs are fine.
  7. Cool the Cupcakes: Leave the cupcakes in the muffin pan for 5 minutes after baking. Carefully transfer them to a wire cooling rack and allow them to cool completely before frosting.
  8. Beat the Vegan Butter: Place the vegan butter in a large mixing bowl if using a hand mixer, or in the bowl of a stand mixer fitted with the whisk attachment.
Beat until the butter becomes light and fluffy. If using chilled vegan margarine as the alternative, use it as specified in the source.
  9. Prepare the Lemon Buttercream: Add the powdered sugar, 1 tablespoon of lemon juice to start, and vanilla extract to the beaten butter. Beat until the ingredients are just combined.
Taste the frosting and adjust the sweetness or lemon flavor as desired, adding more lemon juice within the specified 1–3 tablespoon range. If the frosting is too thin, incorporate more powdered sugar.
If it is too thick, add a little more lemon juice or dairy-free milk until it reaches a suitable consistency.
  10. Frost the Cupcakes: Once the cupcakes are completely cool, spread the lemon buttercream over each one with a spatula or transfer it to a piping bag to create decorative swirls. Decorate as desired.
  11. Serve and Store: Serve the cupcakes immediately after frosting. Keep unfrosted cupcakes in an airtight container at room temperature for up to 3 days. Store frosted cupcakes at room temperature for up to 1 day or refrigerate them for up to 3 days.
Allow refrigerated cupcakes to return to room temperature before serving. The cupcakes can also be frozen; for best results, store them separately from the frosting.

Notes

  • Measure the flour accurately: For the best texture, fluff the flour in its container, spoon it into the measuring cup, and level the top with a knife. Scooping directly from the container can pack in too much flour and make the cupcakes dry. Weighing the flour in grams is recommended.
  • Use fresh lemons: Fresh lemon juice and zest provide the bright citrus flavor that makes these cupcakes special. Approximately 3–4 medium lemons should provide enough zest and juice for the recipe.
  • Avoid the white pith: When zesting lemons, remove only the yellow outer skin. The white layer underneath can contribute a bitter taste.
  • Mix the batter gently: Stir the wet and dry ingredients only until combined to help maintain a light, tender crumb.
  • Check for doneness: Bake for 20–25 minutes at 180°C (350°F). A toothpick inserted into the center should come out without wet batter, although a few crumbs are acceptable.
  • Cool completely before frosting: Warm cupcakes can soften or melt the vegan buttercream, making it difficult to spread or pipe neatly.
  • Adjust the frosting consistency: Add powdered sugar if the buttercream is too thin, or a little lemon juice or dairy-free milk if it is too thick.
  • Try alternative toppings: Lemon icing or vegan cream cheese frosting can be used instead of the lemon buttercream.
  • Store properly: Keep unfrosted cupcakes in an airtight container at room temperature for up to 3 days. Frosted cupcakes can stay at room temperature for 1 day or in the refrigerator for up to 3 days.
  • Freeze separately: The cupcakes freeze well, and storing them separately from the frosting is recommended.
