Ingredients

Strawberry Brownies
  • 1 box strawberry cake mix
  • ⅓ cup vegetable oil
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
Strawberry Glaze
  • ¾ cup powdered sugar
  • 1 tablespoon strawberry preserves
  • 1½ tablespoons milk
  • 1 tablespoon softened cream cheese

Equipment

  • 8×8-inch baking pan
  • Parchment paper
  • Non-stick cooking spray
  • Large mixing bowl
  • Medium mixing bowl
  • Spatula
  • Electric mixer (optional)
  • Whisk
  • Toothpick
  • Wire cooling rack, optional

Method

  1. Prepare the Pan: Preheat the oven to 350°F. Lightly coat an 8×8-inch baking pan with non-stick spray, then line it with parchment paper. Set the prepared pan aside.
  2. Mix the Brownie Batter: In a large bowl, combine the strawberry cake mix, vegetable oil, eggs, vanilla extract, and salt.
Stir with a spatula or mix on low speed using an electric mixer just until the ingredients are combined. Avoid overmixing; the finished batter will be very thick.
  3. Fill the Pan: Transfer the thick batter to the prepared baking pan and spread it evenly across the pan.
  4. Bake the Brownies: Bake at 350°F for 18–24 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  5. Cool Completely: Remove the brownies from the oven once baked and allow them to cool completely at room temperature before adding the glaze.
  6. Prepare the Strawberry Glaze: In a medium bowl, whisk together the powdered sugar, milk, strawberry preserves, and softened cream cheese until the mixture is smooth.
  7. Frost the Brownies: Spread the smooth strawberry glaze evenly over the completely cooled brownies.
  8. Set the Glaze: Allow the frosting to set before cutting the brownies into squares.
  9. Serve: Cut the brownies into 9 squares and serve as desired, especially alongside fresh strawberries and a scoop of vanilla ice cream.

Notes

  • Use room-temperature ingredients to help the batter combine more evenly and support a consistent texture.
  • Avoid overmixing the brownie batter. Stir or mix only until the ingredients are combined, as the batter should remain very thick.
  • Let the brownies cool completely before applying the glaze so the frosting can spread properly.
  • Allow the glaze to set before slicing for cleaner, more defined squares.
  • A glass baking dish is recommended by the source because it can help the brownies bake more evenly and reduce overbrowning.
