Ingredients

  • 6 tablespoons 85 g unsalted butter, melted
  • 1¼ cups 250 g granulated white sugar
  • ¼ teaspoon salt
  • ¾ cup 63 g cocoa powder
  • ¼ cup 60 ml oil
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup 60 g all-purpose flour, spooned and leveled
  • 1 cup 170 g semi-sweet chocolate chips

Equipment

  • 8-inch square baking pan, preferably metal
  • Parchment paper, if using
  • Small saucepan
  • Large mixing bowl
  • Spatula or wooden spoon
  • Whisk
  • Measuring cups and spoons

Method

  1. Preheat the Oven: Preheat the oven to 350°F (177°C) so it is ready when the batter is prepared.
  2. Prepare the Pan: Grease and flour an 8-inch square pan, or line it with parchment paper. A metal baking pan is recommended for more even baking.
  3. Melt the Butter: Place the unsalted butter in a small saucepan and melt it. Keep the butter hot, as it will be combined with the sugar and cocoa powder in the next step.
  4. Combine the Cocoa Mixture: In a large mixing bowl, combine the hot melted butter, granulated sugar, cocoa powder, and salt. Stir thoroughly with a spatula or wooden spoon until combined.
  5. Add the Wet Ingredients: Whisk the oil, room-temperature eggs, and vanilla extract into the butter mixture until the mixture is smooth.
  6. Add the Flour: Add the spooned-and-leveled flour and stir gently with a spatula just until incorporated. Avoid overmixing, as excessive mixing can make the brownies cakier.
  7. Fold in the Chocolate Chips: Gently fold the semi-sweet chocolate chips into the batter until they are distributed throughout.
  8. Fill the Pan: Transfer the brownie batter to the prepared 8-inch square pan and spread it into an even layer.
  9. Bake the Brownies: Place the pan in the preheated 350°F (177°C) oven and bake for about 25 minutes, until the edges look dry while the center remains slightly soft and underdone.
  10. Cool the Brownies: Remove the pan from the oven and allow the brownies to cool before cutting.
  11. Slice and Serve: Cut the cooled brownies into 12 bars and serve.

Notes

  • Use room-temperature eggs so they incorporate smoothly into the chocolate mixture.
  • A metal 8-inch square pan is recommended because it helps the brownies bake evenly.
  • Keep the melted butter hot when mixing it with the sugar and cocoa powder as directed.
  • Spoon the flour into the measuring cup and level it rather than scooping directly from the container.
  • Stir the flour only until it is combined. Overmixing can result in a cakier texture instead of fudgy brownies.
  • The brownies are ready when the edges look dry while the center remains slightly soft and underdone.
  • Allow the brownies to cool before cutting so the soft center can settle and the bars hold their shape more easily.
  • The semi-sweet chocolate chips add extra chocolate flavor and pockets of melted chocolate throughout the brownies.
