Ingredients

For the Brownies
  • 200 g chili chocolate — substitute dark chocolate if unavailable then add more chili to the recipe
  • 150 g dark chocolate
  • 250 g salted butter
  • 5 eggs
  • 200 g white sugar
  • 100 g brown sugar
  • ¼ teaspoon chili powder
  • 200 g flour
For the Candied Chili Peppers
  • 8 mini chili peppers
  • 100 g white sugar
  • 100 ml water
For the Chocolate Topping
  • 300 g dark chocolate
  • ½ teaspoon chili powder

Equipment

  • Medium saucepan
  • Mixing bowls
  • Whisk or electric hand mixer
  • Spatula
  • Bain-marie/double boiler or microwave
  • Baking tray
  • Baking parchment or grease for preparing the tray
  • Cookie cutter for shaping the cooled brownies
  • Refrigerator
  • Wire cooling rack

Method

  1. Candy the Chili Peppers: Combine 100 g white sugar and 100 ml water in a saucepan over medium heat.
Bring the mixture to a boil, stirring until the sugar dissolves and a syrup forms. Add the 8 mini chili peppers, reduce the heat to low, and simmer for 5–7 minutes.
  2. Cool the Peppers: Remove the chili peppers from the syrup and allow them to cool. Transfer them to the refrigerator and keep chilled until they are needed for decorating the brownies.
  3. Preheat the Oven: Preheat the oven to 180°C.
  4. Melt the Chocolate: Place the chili chocolate, dark chocolate, and salted butter in a bowl. Melt them together using a bain-marie or microwave, stirring as needed until the mixture is melted and combined.
  5. Whip the Eggs: In a separate bowl, beat the eggs together with the white sugar and brown sugar until the mixture becomes creamy and frothy.
  6. Combine the Batter: Add the melted chocolate mixture to the beaten eggs and sugars, then mix thoroughly until incorporated.
  7. Add the Dry Ingredients: Gradually add the flour and ¼ teaspoon chili powder. Gently fold them into the chocolate mixture until the batter is evenly combined.
  8. Bake the Brownies: Pour the batter into a greased baking tray and place it in the preheated 180°C oven. Bake for 30–40 minutes.
  9. Cool Completely: Remove the brownies from the oven once baked and allow them to cool completely before cutting or decorating.
  10. Prepare the Topping: Melt 300 g dark chocolate together with ½ teaspoon chili powder using a bain-marie. Stir until the chocolate is melted and the chili powder is incorporated.
  11. Shape the Brownies: Once completely cooled, use a cookie cutter to cut the brownies into 8–10 round pieces.
  12. Coat the Brownies: Cover each round brownie with the melted chili chocolate topping.
  13. Decorate the Brownies: Finish each brownie by placing one candied mini chili pepper on top.

Notes

  • Store the finished brownies in an airtight container at room temperature for up to 4 days.
  • For longer storage, refrigerate the brownies for up to 1 week.
  • The candied mini chili peppers can be prepared one day ahead and kept chilled until decorating.
  • If chili chocolate is unavailable, use dark chocolate as suggested in the source and increase the chili used in the recipe.
  • Allow the brownies to cool completely before cutting them into rounds and adding the chocolate topping.
  • The recipe yields approximately 8–10 round brownies, depending on the size of the cookie cutter.
