  • 10 cardamom pods shells discarded and seeds freshly ground, yielding about 1 teaspoon ground cardamom
  • 3/4 cup 100 g unbleached all-purpose flour
  • 1/4 cup 20 g finely ground espresso powder
  • 3/4 teaspoon fine-grain sea salt
  • 12 ounces bittersweet chocolate chopped; chocolate around 70% cacao is recommended
  • 2/3 cup 150 g unsalted butter
  • 3 large eggs
  • 1 1/2 cups 285 g firmly packed dark brown sugar

Equipment

  • 8 × 8-inch baking dish or equivalent
  • Small saucepan
  • Stainless steel mixing bowl suitable for a double boiler
  • Small bowl
  • Tiny cup or small ramekin
  • Whisk
  • Silicone spatula
  • Measuring cups and spoons
  • Kitchen scale
  • Wire cooling rack
  • Plastic wrap

Method

  1. Prepare the Oven and Pan: Preheat the oven to 350°F with a rack positioned in the middle. Butter an 8 × 8-inch baking dish or an equivalent-sized pan.
  2. Prepare the Cardamom Mixture: Combine the vanilla extract and freshly ground cardamom seeds in a small cup. The ground cardamom should measure about 1 teaspoon. Set the mixture aside.
  3. Combine the Dry Ingredients: In a small bowl, stir together the all-purpose flour, finely ground espresso powder, and fine-grain sea salt. Set aside.
  4. Melt the Butter: Create a double boiler by setting a stainless steel mixing bowl over a small saucepan of gently simmering water. Add the butter to the bowl and let it melt. Turn off the heat once the butter has melted.
  5. Melt the Chocolate: Add the chopped bittersweet chocolate to the melted butter and stir until the chocolate is completely smooth and melted.
Keep water and steam away from the chocolate mixture, as moisture can interfere with properly melted chocolate. Set aside to cool.
  6. Whisk the Eggs and Sugar: In a large mixing bowl, whisk together the eggs, firmly packed dark brown sugar, and vanilla-cardamom mixture.
Continue whisking vigorously for a few minutes, until the sugar dissolves and the mixture becomes lighter and increases in volume.
  7. Combine the Chocolate Batter: Once the chocolate mixture has cooled to roughly room temperature, use a spatula to fold it into the egg mixture. Continue folding until the batter is evenly combined.
  8. Add the Dry Mixture: Sprinkle the flour, espresso, and salt mixture over the chocolate batter. Gently fold it in with the spatula just until incorporated, taking care not to overmix.
  9. Fill the Baking Dish: Transfer the finished batter to the prepared baking dish and spread it evenly.
  10. Bake the Brownies: Bake at 350°F for about 25 minutes. The edges should appear dark and set, while the top should remain glossy with some cracking. The center should provide structured resistance when checked and should not jiggle.
  11. Cool the Brownies: Place the baking dish on a wire rack and allow the brownies to cool completely.
  12. Chill Overnight: Cover the cooled brownies with plastic wrap and refrigerate overnight. They can be enjoyed after cooling, but the original recipe recommends waiting until the following day for the fullest flavor and texture.

Notes

  • Use bittersweet chocolate in the 70% range for the intended deep chocolate flavor.
  • Grind the cardamom seeds freshly after removing the shells; the recipe calls for about 1 teaspoon of ground cardamom.
  • Keep water and steam away from the chocolate while melting, as moisture can affect the texture.
  • Whisk the eggs, brown sugar, vanilla, and cardamom mixture thoroughly until the sugar dissolves and the mixture becomes lighter and more voluminous.
  • Fold the flour mixture in gently and stop as soon as it is incorporated to avoid overmixing.
  • Look for dark, set edges and a glossy, cracked surface when the brownies are ready.
  • The center should feel structured rather than jiggle when the pan is moved.
  • Allow the brownies to cool completely before covering and refrigerating them overnight.
  • The brownies can be enjoyed once cooled, but chilling overnight gives them their most developed texture and flavor.
