Classic Trinidad Coconut Tart

Soft, golden pastry pockets filled with tender shredded coconut simmered in brown sugar and warm spices, finished with a simple sugar glaze and baked until beautifully golden.

Ingredients
  

Coconut Filling
  • 4 cups shredded fresh dry coconut about 1 whole coconut
  • 1 cup brown sugar; granulated sugar may also be used
  • 1 teaspoon ginger powder or 1 tablespoon loosely packed coarsely grated fresh ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla essence or extract
  • 1 teaspoon ground cinnamon
  • 1 bay leaf
  • Small splash of water only if using packaged coconut, to help soften it during cooking
Flour Casing
  • 4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tablespoon instant yeast
  • 4 tablespoons Crisco or shortening
  • 1 1/2 to 2 cups water
  • 2 drops yellow food coloring optional
Glaze
  • 2 tablespoons granulated sugar
  • 2 tablespoons water

Method
 

  1. Cook the Coconut Filling: Add the shredded coconut, sugar, ginger, nutmeg, vanilla, cinnamon, and bay leaf to a pan over medium heat. If using packaged coconut, add a small splash of water at the beginning to help soften it as it cooks.
  2. Simmer the Filling: Cook the coconut mixture for about 15 minutes, stirring throughout, until the coconut is tender and the mixture is no longer wet.
  3. Remove the Bay Leaf: Take the pan off the heat, remove the bay leaf, and set the coconut filling aside to cool while preparing the dough.
  4. Mix the Dry Ingredients: Place the flour, granulated sugar, and instant yeast in a large bowl and combine thoroughly.
  5. Incorporate the Shortening: Add the Crisco or shortening and work it into the flour mixture until it is well incorporated.
  6. Form the Dough: Gradually add 1 1/2 to 2 cups of water, adding it as needed, along with the yellow food coloring if using. Mix until a smooth, soft dough forms.
  7. Rest the Dough: Shape the dough into a ball, cover it, and let it rest for 30 minutes.
  8. Divide the Dough: Separate the rested dough into 16 roughly equal portions and shape each portion into a ball.
  9. Rest the Dough Balls: Cover the dough balls with a damp towel and allow them to rest for another 20 minutes.
  10. Prepare the Oven: Preheat the oven to 350°F and lightly grease a baking sheet.
  11. Roll the Dough: Working on a lightly floured surface, roll each dough ball into a circle. Keep the dough from becoming too thin.
  12. Fill the Pastries: Place about 2 tablespoons of coconut filling onto one half of each dough circle.
  13. Moisten the Edges: Lightly dampen the exposed edges of the dough with water to help create a secure seal.
  14. Fold and Seal: Fold the dough over the coconut filling, align the edges evenly, and press them together firmly to seal.
  15. Crimp the Edges: Secure the sealed edges by crimping them with a fork.
  16. Arrange the Tarts: Repeat the rolling, filling, folding, sealing, and crimping process with the remaining dough and filling, then place the finished tarts on the prepared baking sheet.
  17. First Bake: Bake the tarts at 350°F for 20 minutes.
  18. Prepare the Glaze: While the tarts bake, combine the 2 tablespoons granulated sugar with 2 tablespoons water to make the glaze.
  19. Brush the Tarts: Remove the baked tarts from the oven and brush their tops with the prepared sugar glaze.
  20. Finish Baking: Return the glazed tarts to the oven and bake for another 5 minutes.
  21. Cool Before Serving: Transfer the finished tarts to a wire rack and allow them to cool before eating, taking care because the coconut filling will be very hot.

Notes

  • Fresh, dry coconut provides the best flavor, and one whole coconut generally yields about 4 cups when shredded.
  • If using packaged unsweetened coconut, pulse it briefly in a food processor to shorten any long strands before cooking.
  • Add a small splash of water when cooking packaged coconut to help soften it.
  • Avoid overfilling the pastry rounds, as excess filling can cause the tarts to open during baking.
  • Align the pastry edges carefully before sealing, then crimp firmly with a fork to help prevent the filling from escaping.
  • Let the baked tarts cool before eating because the coconut filling remains very hot after baking.
  • Store completely cooled tarts in an airtight container or Ziploc bag at room temperature for up to 2 days. After that, refrigerate them.
  • Reheat refrigerated tarts in a toaster oven, air fryer, or regular oven until warmed through.
