Ingredients

Brownie Batter
  • ½ cup unsalted butter
  • 8 oz semi-sweet chocolate chopped into small pieces, or semi-sweet chocolate chips
  • 1 cup granulated sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • ¾ tsp espresso powder
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp baking powder
  • 4 Tbsp unsweetened cocoa powder
  • 1 Tbsp canola oil
  • 1 cup milk chocolate chips
  • ¼ cup semi-sweet chocolate chips for topping

Equipment

  • 9×9-inch or 8×8-inch square baking pan
  • Parchment paper or aluminum foil
  • Large microwave-safe bowl or double boiler
  • Whisk or rubber spatula
  • Measuring cups and spoons
  • Mixing bowl, if needed
  • Cake tester or toothpick
  • Wire cooling rack or heat-safe surface
  • Airtight container for storage

Method

  1. Prepare the Pan: Preheat the oven to 350°F. Line a 9×9-inch or 8×8-inch square baking pan with foil or parchment paper, or grease it with baking spray. Set the prepared pan aside.
  2. Melt the Chocolate: Combine the unsalted butter and chopped semi-sweet chocolate in a large microwave-safe bowl or melt them together over a double boiler.
If using a microwave, heat in 30-second intervals, stirring after each interval until the mixture is completely melted and smooth.
  3. Cool the Chocolate Mixture: Let the melted butter and chocolate mixture cool for 8–10 minutes before continuing.
  4. Add Sugar and Eggs: Add the granulated sugar and eggs to the slightly cooled chocolate mixture. Whisk or stir thoroughly with a rubber spatula until the ingredients are very well incorporated.
  5. Flavor the Batter: Mix in the vanilla extract and espresso powder until evenly combined.
  6. Add the Dry Ingredients: Add the all-purpose flour, salt, baking powder, and unsweetened cocoa powder. Stir until the dry ingredients are fully incorporated and the brownie batter is well combined.
  7. Blend in the Oil: Pour in the canola oil and stir until it is completely incorporated into the batter.
  8. Fold in Milk Chocolate Chips: Add 1 cup milk chocolate chips and stir until they are evenly distributed throughout the brownie batter.
  9. Fill the Pan: Transfer the brownie batter to the prepared baking pan and spread it into an even layer.
  10. Add the Chocolate Topping: Sprinkle ¼ cup semi-sweet chocolate chips over the surface. Use a rubber spatula to gently press the chips into the batter, then smooth the batter so it sits evenly in the pan.
  11. Bake the Brownies: Bake at 350°F for 25–30 minutes, or until a cake tester inserted into the brownies comes out clean with only a few fudgy crumbs attached.
  12. Cool Before Cutting: Allow the brownies to cool before cutting them into squares.
  13. Store the Brownies: Keep any leftovers in an airtight container at room temperature.

Notes

  • Use either a 9×9-inch or 8×8-inch square baking pan, as specified in the recipe.
  • If using chopped chocolate, cut the semi-sweet chocolate into small pieces so it melts evenly with the butter.
  • Let the melted chocolate mixture cool for 8–10 minutes before adding the sugar and eggs.
  • For microwave melting, use 30-second intervals and stir after each interval to help the chocolate melt evenly.
  • Espresso powder enhances the chocolate flavor while remaining a background ingredient.
  • Do not skip the milk chocolate chips folded into the batter; they add extra chocolate pockets throughout the brownies.
  • Press the semi-sweet chocolate chips slightly into the surface before baking so they become part of the crackled brownie top.
  • Begin checking the brownies at 25 minutes. They are ready when a cake tester comes out clean with just a few fudgy crumbs attached.
  • Allow the brownies to cool completely enough to cut before slicing them into squares.
  • Store leftover brownies in an airtight container at room temperature.
