Ingredients

  • 1 cup dried figs
  • 1 cup cashew butter or substitute any nut or seed butter of your choice
  • ⅓ cup coconut oil melted (or substitute coconut butter for an oil-free option)
  • ½ cup raw cacao powder

Equipment

  • Food processor
  • Measuring cups
  • Spatula
  • Baking pan or square dish
  • Parchment paper
  • Sharp knife
  • Cutting board

Method

  1. Prepare the Dried Figs: If your dried figs are not moist and soft, soak them in boiling water for 10 minutes. Drain them well before adding them to the food processor to make blending easier.
  2. Blend the Ingredients: Add the dried figs, cashew butter, melted coconut oil, and raw cacao powder to a food processor. Blend until the mixture becomes smooth, thick, and sticky.
  3. Prepare the Pan: Line a pan with parchment paper, making sure the bottom is covered so the fudge can be removed easily after freezing.
  4. Transfer the Fudge Mixture: Scrape the chocolate fig mixture into the prepared pan. Spread it evenly, then press it firmly into the bottom to create a compact layer.
  5. Freeze Until Firm: Place the pan in the freezer for approximately 1 hour, or until the fudge has set and is firm enough to cut into squares.
  6. Slice and Serve: Remove the set fudge from the freezer. Cut it into squares using a sharp knife and serve immediately while cold.
  7. Store the Leftovers: Place any remaining fudge in a suitable freezer-safe container and keep it in the freezer for up to 1 month.

Notes

  • Sweetness: Dried figs provide the natural sweetness for this fudge, so no additional sweetener is included in the original recipe.
  • Fig Preparation: If the dried figs are firm or dry, soak them in boiling water for 10 minutes, then drain thoroughly before blending.
  • Nut Butter Substitution: Cashew butter can be replaced with any nut or seed butter of your choice.
  • Oil-Free Option: Use coconut butter instead of coconut oil for the alternative suggested in the original recipe.
  • Setting Time: Freeze the mixture for approximately 1 hour, or until firm enough to slice.
  • Storage: Keep leftover fudge in the freezer for up to one month.
  • Serving: Serve the squares directly from the freezer for the intended firm, chilled texture.
  • Dietary Information: The recipe is vegan and uses no refined sugar as an added ingredient.
