Buttery Peach Muffins for Any Morning

Tender, buttery muffins packed with diced peaches and enriched by the nutty depth of browned butter.

Ingredients
  

For the Muffins
  • ½ cup 113 g unsalted butter
  • 1 cup 200 g granulated sugar
  • 1 large egg preferably at room temperature
  • ¾ teaspoon vanilla extract
  • ½ cup 118 ml buttermilk, preferably at room temperature
  • 1⅔ cups 210 g all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • cups 175 g diced peaches
  • Coarse sugar for sprinkling, or regular granulated sugar
Peach Preparation
  • Fresh or frozen peaches may be used. If using frozen peaches thaw, drain, and pat them dry before dicing. Removing the skin is optional, though the source notes that peach skin can be somewhat tough in the finished muffins.

Method
 

  1. Brown the Butter: Melt the unsalted butter in a saucepan over medium-low heat, then raise the heat to medium and cook while stirring constantly. The butter will sizzle and pop as it cooks.
    When the popping slows or stops and the butter begins turning golden brown, with brown flecks visible on the bottom of the pan, immediately remove it from the heat.
  2. Cool the Brown Butter: Pour the browned butter into a large heatproof mixing bowl and let it cool completely until it is no longer warm to the touch before continuing.
  3. Prepare the Oven and Pan: Preheat the oven to 375°F (190°C) and line a 12-count muffin tin with paper liners.
  4. Combine the Wet Ingredients: Once the browned butter has cooled, add the granulated sugar, egg, and vanilla extract. Whisk thoroughly until the mixture is well combined.
  5. Add the Buttermilk: Pour the buttermilk into the butter mixture and stir until incorporated.
  6. Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined.
  7. Begin Combining the Batter: Add the dry ingredients to the wet mixture and gently fold with a spatula until the flour is only about halfway incorporated.
  8. Fold in the Peaches: Add the diced peaches and continue folding just until the ingredients are completely combined. Avoid over-mixing, as this can make the finished muffins dense.
  9. Fill the Muffin Tin: Divide the batter evenly among the prepared muffin liners, then sprinkle the tops with coarse sugar or regular granulated sugar.
  10. Bake the Muffins: Place the muffin tin on the center rack of the 375°F (190°C) oven and bake for 20 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  11. Cool in the Pan: Leave the baked muffins in the muffin tin for 5 minutes before carefully transferring them to a cooling rack.
  12. Finish with Glaze: Allow the muffins to cool completely before drizzling them with vanilla glaze, if desired.

Notes

  • Peach choice: Fresh or frozen peaches can be used. If using frozen peaches, thaw, drain, and pat them dry before adding them to the batter.
  • Peel or keep the skin: Peach skin may be left on, but removing it can prevent a tougher texture in the finished muffins.
  • Brown butter carefully: Watch the butter closely as it changes from golden to browned. Remove it from the heat as soon as brown flecks appear and the butter has developed its browned color.
  • Cool before mixing: The browned butter must cool completely and should no longer feel warm to the touch before the egg and other wet ingredients are added.
  • Avoid over-mixing: Fold the flour mixture and peaches gently and stop as soon as the batter is combined. Over-mixing can produce dense muffins.
  • Sugar topping: Coarse sugar gives the muffin tops a pleasant bakery-style finish, while regular granulated sugar can also be used.
  • Storage: Keep the muffins in an airtight container at room temperature for up to 2–3 days or refrigerate for up to 5 days. Refrigeration may make them somewhat denser and drier.
