Ingredients

Lemon Blueberry Cupcakes
  • 1½ cups 188g all-purpose flour, spooned and leveled
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup 8 tablespoons; 113g unsalted butter, softened to room temperature
  • 1 cup 200g granulated sugar
  • 1 tablespoon lemon zest
  • 2 large eggs at room temperature
  • 1½ teaspoons pure vanilla extract
  • ½ cup 120ml whole milk or buttermilk, at room temperature
  • ¼ cup 60ml fresh lemon juice
  • 1 cup 140g fresh or frozen blueberries, tossed in 1 tablespoon flour
Cream Cheese Frosting
  • 8 ounces 226g full-fat brick cream cheese, softened to room temperature
  • ¼ cup 4 tablespoons; 56g unsalted butter, softened to room temperature
  • 2 cups 240g confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Optional garnish: lemon slices and extra blueberries

Equipment

  • 12-cup muffin pan
  • Cupcake liners
  • Large mixing bowl
  • Medium or large mixing bowl for frosting
  • Handheld or stand mixer
  • Paddle attachment
  • Whisk attachment, if preferred for the frosting
  • Whisk
  • Citrus zester
  • Citrus juicer
  • Measuring cups and spoons
  • Rubber spatula
  • Toothpick or cake tester
  • Piping bag
  • Small icing spatula, optional
  • Cupcake carrier, optional

Method

  1. Prepare the Pan and Oven: Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. The recipe makes about 15 cupcakes, so prepare a second batch of liners for the remaining batter.
  2. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined. Set the mixture aside.
  3. Cream Butter, Sugar, Lemon Zest: Using a handheld or stand mixer fitted with a paddle attachment, beat the softened butter, granulated sugar, and lemon zest on medium-high speed for about 3 minutes, until the mixture is properly creamed. Scrape down the sides and bottom of the bowl as needed.
  4. Add Eggs and Vanilla: Add the eggs and vanilla extract to the creamed mixture. Beat on medium-high speed for about 1 minute, until everything is well combined, scraping the bowl again as needed.
  5. Finish the Batter: Add the dry ingredients to the wet mixture. Turn the mixer to low speed and slowly pour in the room-temperature milk or buttermilk and fresh lemon juice. Mix only until the ingredients are just combined.
  6. Fold in Blueberries: Add the blueberries that have been tossed in flour. Gently fold them into the batter with a spatula, taking care not to overmix.
  7. Fill the Liners: Spoon or portion the batter into the prepared cupcake liners, filling each one only about two-thirds full to prevent the batter from spilling over during baking.
  8. Bake the Cupcakes: Bake at 350°F (177°C) for 18–21 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. For approximately 30–36 mini cupcakes, bake at the same temperature for about 11–13 minutes.
  9. Cool Completely: Remove the cupcakes from the oven and allow them to cool completely before adding the frosting.
  10. Beat the Frosting Base: In a large bowl, use a handheld or stand mixer fitted with a whisk or paddle attachment to beat the softened cream cheese and butter on medium speed for about 2 minutes, until smooth.
  11. Finish the Frosting: Add the confectioners’ sugar, vanilla extract, and a pinch of salt. Beat on low speed for 30 seconds, then increase to medium-high and continue beating for 2 full minutes. Taste the frosting and add another small pinch of salt if desired.
  12. Chill for Piping: If creating intricate frosting designs, refrigerate the finished frosting for at least 20 minutes before piping.
  13. Frost the Cupcakes: Frost the completely cooled cupcakes using a piping bag fitted with an Ateco #808 piping tip, if desired, or spread the frosting over the cupcakes with a small icing spatula.
  14. Add Garnishes and Set: Decorate with optional lemon slices and extra blueberries. Refrigerate the decorated cupcakes uncovered for at least 20 minutes to help the frosting set before serving.
  15. Store Leftovers: Cover leftover cupcakes and refrigerate for up to 5 days. Use a cupcake carrier if transporting or storing the decorated cupcakes.

Notes

  • Use room-temperature eggs, butter, milk or buttermilk, and cream cheese so the ingredients combine smoothly and evenly.
  • Buttermilk can be used in place of whole milk; the original recipe notes that it produces especially moist cupcakes.
  • Toss the blueberries with 1 tablespoon of flour before folding them into the batter to help distribute them through the cupcakes.
  • Avoid overmixing once the dry ingredients and liquids are combined, as the original method calls for mixing only until just combined.
  • Fill the cupcake liners only two-thirds full to help prevent the batter from spilling over during baking.
  • Let the cupcakes cool completely before frosting so the cream cheese frosting remains smooth and properly set.
  • If the frosting feels too soft for detailed piping, refrigerate it for at least 20 minutes before decorating.
  • Decorated cupcakes can be refrigerated for up to 5 days. Plain or frosted cupcakes can also be frozen for 2–3 months and thawed overnight in the refrigerator.
  • For advance preparation, the plain cupcakes and frosting can each be prepared one day ahead. Keep the cupcakes covered and store the frosting covered in the refrigerator.
  • The recipe makes approximately 15 standard cupcakes or about 30–36 mini cupcakes
