  • 1 teaspoon cinnamon
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup fresh blueberries 160 g
  • ½ cup unsweetened vanilla almond milk 4 fl oz
  • ⅓ cup light brown sugar 67 g
  • ¼ cup coconut oil melted (2 fl oz)
  • 3 tablespoons unsalted butter softened
  • 2 eggs room temperature (100 g)
  • 1 teaspoon vanilla extract
Crumb Topping
  • ⅓ cup brown sugar 67 g
  • 3 tablespoons unsalted butter cold (45 g)
  • ⅓ cup all-purpose flour 42 g
  • ⅓ cup rolled oats 27 g
  • ½ teaspoon cinnamon

Equipment

  • Oven
  • 12- or 14-cup muffin pan or non-stick baking cups
  • Medium mixing bowl
  • Large mixing bowl
  • Measuring cups and spoons
  • Handheld mixer or stand mixer fitted with a paddle attachment
  • Fork or clean fingers for cutting the butter into the crumble
  • Spoon or spatula
  • Toothpick for testing doneness
  • Wire cooling rack

Method

  1. Preheat the Oven: Preheat the oven to 425°F.
  2. Prepare the Crumb Topping: Combine the brown sugar, cold butter, flour, rolled oats, and cinnamon in a medium bowl. Use your fingers or a fork to cut the cold butter into the dry ingredients until the m
ixture forms large, coarse crumbles. Work patiently and avoid over-mixing. Set the topping aside.
  3. Soak the Oats: Pour the unsweetened vanilla almond milk over the rolled oats and set the mixture aside.
  4. Combine the Dry Ingredients: In a separate bowl, mix the all-purpose flour, vanilla casein protein powder, vanilla whey protein powder, cinnamon, baking powder, baking soda, and salt until evenly combined.
  5. Cream the Butter and Sugar: Using a handheld or stand mixer fitted with a paddle attachment, beat the softened butter and light brown sugar on high speed for about 2 minutes, until the mixture is smooth and creamy.
  6. Add the Eggs: Add the room-temperature eggs one at a time, beating after each addition until well combined.
  7. Incorporate the Coconut Oil: Reduce the mixer speed to low and slowly add the melted coconut oil, mixing until it is thoroughly incorporated.
  8. Combine the Batter: Add the wet ingredients to the dry mixture and mix only until the ingredients are just combined.
  9. Fold in the Blueberries: Gently fold the blueberries into the batter, taking care not to overmix.
  10. Fill the Muffin Cups: Divide the batter evenly among 14 non-stick baking cups.
  11. Add the Crumble: Divide the prepared crumb topping over the muffins, using a spoon or your fingers, then gently press the crumbles into the tops so they adhere to the batter.
  12. Begin Baking: Place the muffins in the 425°F oven and bake for 5 minutes.
  13. Reduce the Oven Temperature: After 5 minutes, lower the oven temperature to 350°F and continue baking for about 20 minutes.
  14. Check for Doneness: Bake until the muffin tops begin to brown slightly and a toothpick inserted into the center of a muffin comes out clean.

Notes

  • Use room-temperature eggs as specified so they incorporate smoothly into the creamed butter and sugar.
  • The coconut oil should be melted before adding it to the batter.
  • Keep the crumb topping in large, coarse pieces rather than mixing it into a fine, uniform mixture.
  • Avoid over-mixing the crumb topping so the finished muffins retain a distinct streusel texture.
  • Mix the muffin batter only until the ingredients are combined, then gently fold in the blueberries.
  • The recipe source states 14 servings, but one instruction refers to 16 muffins when distributing the topping. Since the stated yield is 14, divide the crumble evenly among the 14 filled muffin cups.
  • Begin baking at 425°F, then reduce the temperature to 350°F after 5 minutes.
  • The muffins are ready when the tops are slightly browned and a toothpick inserted into the center comes out clean.
