Ingredients

Cookie Dough
  • ¾ cup 180 g unsalted butter, softened
  • ¾ cup 150 g light brown sugar, packed
  • ½ cup 100 g granulated sugar
  • 1 large egg at room temperature
  • 1 large egg yolk at room temperature
  • 1½ teaspoons vanilla extract
  • 2½ cups 325 g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup 190 g semisweet chocolate chips

Equipment

  • Oven
  • 2 baking sheets
  • Parchment paper
  • Large mixing bowl
  • Separate mixing bowl
  • Electric mixer
  • Whisk
  • Rubber spatula or spoon
  • 1.5-tablespoon cookie scoop
  • Wire cooling rack

Method

  1. Prepare the Oven and Baking Sheets: Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set them aside.
  2. Cream the Butter and Sugars: Place the softened butter, packed light brown sugar, and granulated sugar in a large bowl.
Using an electric mixer on medium speed, beat for about 3 minutes, until the mixture is fluffy. Scrape down the sides of the bowl as needed.
  3. Add the Eggs and Vanilla: Beat in the room-temperature egg, egg yolk, and vanilla extract until the mixture is thoroughly combined.
  4. Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt until evenly mixed.
  5. Incorporate the Flour Mixture: Add the dry ingredients to the butter mixture. Beat on low speed just until the flour is almost completely incorporated, taking care not to overmix.
  6. Add the Chocolate Chips: Gently fold the semisweet chocolate chips into the dough until they are evenly distributed.
  7. Portion the Dough: Using a 1.5-tablespoon cookie scoop, portion the dough into mounds on the prepared baking sheets. Arrange them about 2 inches apart to allow room for spreading.
  8. Bake the Cookies: Bake at 350°F for 10–12 minutes, or until the edges are lightly browned while the centers still look just underdone.
  9. Cool on the Baking Sheets: Leave the cookies on the baking sheets for 10 minutes after removing them from the oven.
  10. Finish Cooling: Carefully transfer the cookies to a wire rack and allow them to cool completely.

Notes

  • Use softened butter and room-temperature eggs as specified for a smooth, well-combined dough.
  • Scrape down the bowl while creaming the butter and sugars so the mixture stays evenly blended.
  • When adding the flour mixture, mix only until it is almost fully incorporated; this helps maintain the intended soft, chewy texture.
  • Keep the dough portions about 2 inches apart on the baking sheets.
  • Watch the cookies closely near the end of baking. The edges should be lightly browned while the centers remain slightly underdone.
  • For extra chocolate on top, reserve a few chocolate chips and press them onto the cookies immediately after they come out of the oven.
  • The covered cookie dough can be refrigerated for up to 3 days. Bring it to room temperature before continuing with the recipe.
  • Baked cookies can be kept in an airtight container at room temperature for up to 1 week or frozen for up to 3 months.
