Ingredients

  • 1 stick unsalted butter
  • 1½ cups no-sugar-added chocolate chips divided
  • 4 eggs at room temperature
  • 16 Medjool dates pitted (about ¾ pound)
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon salt

Equipment

  • 8 × 8-inch square baking pan
  • Parchment paper
  • Large microwave-safe bowl
  • High-speed blender
  • Whisk
  • Small bowl
  • Fine-mesh sieve or strainer
  • Rubber spatula
  • Measuring cups and spoons

Method

  1. Prepare the Pan: Preheat the oven to 350°F. Line an 8 × 8-inch baking pan with parchment paper, leaving an overhang on all four sides for easy removal.
  2. Melt the Chocolate: Place the butter and 1 cup of the chocolate chips in a large microwave-safe bowl. Microwave in 30-second intervals until both the butter and chocolate are melted, whisking until smooth. Allow the mixture to cool slightly.
  3. Blend the Dates: Add the room-temperature eggs and pitted Medjool dates to a high-speed blender. Process for about 1 minute, or until smooth.
Only very small pieces of date, approximately sesame-seed sized, should remain; blend longer if larger pieces are still visible.
  4. Combine the Wet Mixture: Pour the blended egg-and-date mixture into the melted chocolate. Whisk for about 1 minute, or until thoroughly combined, then whisk in the vanilla extract.
  5. Sift the Dry Ingredients: In a separate small bowl, sift together the all-purpose flour, cocoa powder, and salt.
  6. Finish the Batter: Add the sifted dry ingredients to the chocolate mixture and gently fold with a rubber spatula until no streaks of flour remain. Fold in the remaining ½ cup chocolate chips.
  7. Fill the Pan: Scrape the finished batter into the prepared baking pan and use the spatula to spread it into an even layer.
  8. Bake the Brownies: Bake at 350°F for 20–25 minutes, or until the top looks set while the center remains fudgy.
  9. Cool and Slice: Let the brownies cool for about 30 minutes before removing them from the pan and slicing into 16 equal pieces.

Notes

  • Use Medjool dates that are fully pitted before adding them to the blender.
  • Keep the eggs at room temperature as specified in the source.
  • Blend the dates and eggs until only tiny, sesame-seed-sized pieces of date remain.
  • Melt the butter and chocolate chips in 30-second microwave intervals to help prevent overheating.
  • Let the melted chocolate mixture cool slightly before combining it with the egg-and-date mixture.
  • Fold the flour mixture gently and stop once no visible streaks of flour remain.
  • Reserve ½ cup of the chocolate chips to fold into the finished batter.
  • For the fudgiest texture, bake only until the top is set while the center remains fudgy.
  • Allow the brownies to cool for about 30 minutes before slicing into 16 pieces.
